Stuffed Palak Bhajji| Stuffed Spinach Fritters| How to make Stuffed Palak Bhajji


Hi SUPERMOMS,
It's been a while since I have posted my previous recipe. I have been busy baking for Christmas. My house smells of cookies,muffins and cakes. A MERRY CHRISTMAS to all. 
Greens are very healthy for growing children as well as adults. But many kids do not like greens.

This is a very healthy and tasty snack for kids and they will love it . You can pack them for their tiffin too.
BASIC INGREDIENTS:

Grated Paneer- 100 gms( you can use mashed potato/grated bottle gourd/grated carrot) also
Corn flour - 2 tsp 
Bread(2 slices)

Chilli powder,salt,dhania powder and any masala of your choice(I used kitchen king masala)
Finely chopped Pudhina leaves
Uncut  Palak leaves 
Besan(gram flour) -2 tbsp
Oil for frying (I have used refined Canola Oil)

PROCEDURE:
LET US FIRST GET THE FILLING READY!
STEP 1:
I have used grated bottle gourd .But grated paneer or mashed potatoes are great options that kids will love.
After squeezing water completely out of the bottle gourd,add the cornflour and bread to it. You can just tear the bread with hand and mash it along with the mixture. The bread absorbs the extra moisture. If you are using potatoes,then you might need less bread. Make it into a thick dough so that it absorbs less oil.



STEP 2:
Now add chilli powder,salt,dhania powder and your kids favourite masala according to their taste. Add finely chopped pudhina/ Mint leaves.
Your filling is ready!!

STEP 3:
keep oil for heating to fry the Palak fritters

STEP 4:
While the oil is heating, take the Washed and dried Palak leaves and stuff them with the filling as shown in the picture.








STEP 5:

CHEF TIP: Toss the Stuffed Palak leaves in  cornflour and then dip it in the Besan| Gramflour mixture. This helps in uniform coating of the Spinach / Palak leaves.

Dip the stuffed PALAK in the BESAN gravy. Add the BESAN with little water to make a thick paste. Add salt and little chilli powder to the batter(optional).
Deep fry them . Your delicious and nutritious STUFFED PALAK FRITTERS are ready to be served.
