As I mentioned earlier, if you have the tortillas ready, you can make so many dishes out of it and that too so easily. Today, I am sharing this super delicious pie recipe. We can call it the MEXICAN LASAGNE.

TORTILLAS- 9 to 12 no.s
cheddar cheese- 2 cups

Mexican sauce( i made a spicy enchilada sauce)

Mushrooms-2 packets thinly sliced

Bell peppers ,paprika and jalapenoes- thinky sliced


1. Firstly, in a large wide mouthed pan, saute' the onions with olive oil, add bellpeppers, mushrooms, some jalapenoes,salt .

2. Since I did not have the sauce ready, made it alongside the mushrooms. I pureed 6 tomatoes with garlic and 2 paprika chillies and 2 jalapenos. In a pan, allowed it to simmer and cook.

3. Now,pour the sauce on the vegetables and allow it to cook till it becomes a little thick.

4. Now we have our grated cheese ready.

5. Now its time to layer our pie. I have my tortillas ready too. I used a medium size casserole,and layer it first with sauce.

6. Then with the tortillas

7. Then with cheese. Repeat the order and garnish with bellpeppers

8. In a preheated oven, bake the pie at 180 degrees for 45 minutes or until the cheese has stopped bubbling. You can cover the casserole with foil to avoid burning of the top.

Your delicious BURRITO PIE is ready to be served!!!!

This is an awesome recipe, as it tastes delicious! 

I suggest you have your sauce and the tortillas ready before hand. It will ease your work. Also, this is the best revipe you can make when you entertain large guests!
