COTTAGE CHEESE CRESENT ROLL UP | How to make a Cresent Roll up at home | Stepwise Pictures

I am sooo excited to share this yummilicious recipe with you all!

It looks so cute and you can happily pack these for your kid's tiffin box too! I consciously avoided cheddar/ mozarella( you can add them) and added the lighter option PANEER( cottage cheese). Tasted really good!

Preparation time : 1 hour
Cook time: 15-20 minutes

For the dough:

Whole Wheat Flour- 1 cup( 200 gms)
All purpose flour- 1 cup( 200gms)
Instant dry yeast- 1/2 tsp
Salt- 1/4 to 1/2 tsp
Sugar- 1 tbsp
Luke warm water- 200 ml( adjust)
Butter/ olive oil- 2 tbsp

For the filling:

Grated paneer
Pureed tomatoes-2
Grated cauliflower
Jalapenoes/ paprika( I used them as they are in season)
Bell peppers- chopped
Crushed peppercorns
Grated garlic- 1 pod
Salt to taste.

Ofcourse you can make your own filling of vegetables available at home. Soya granules, Tofu ,mushrooms are great options!

Let us start our preparation of dough, the process is the same as for pizza.

1.In a large bowl, add the flour, salt, sugar and yeast. Mix everything together well. Pour luke warm water in the dough and start binfing the dough. Add the oil and keep kneading. Add extra water if you feel that the dough is hard. You should be kneading a little sticky dough.

2.The water has to be warm and not HOT!

3.Make a well and pour the warm water.

4.The sticky dough. This is how it looks before You start to knead.

Knead for 10 minutes or until you get a smooth dough.  Grease a bowl and place the dough inside and cover it with a damp towel or cling wrap. Place it in a warm place to rise for 30 minutes or till the dough has almost doubled.
5.The dough would have reasonably risen and will look like this.

6. By the time, the dough rises, let us prepare the filling. In a pan, a tsp of olive oil and add the garlic. Saute' it for a minute and add the tomato puree. When it changes colour( looks cooked) add the bell peppers, cauliflower. When they are half done, add the paneer. Let the filling be thick.

7. Punch down the dough and divide them into smaller portions. Roll one portion to make a rectangle of 1 cm thickness.Using a pizza cutter, cut triangles.

8. Use the bigger triangles to make the rolls. Place the stuffing on the larger side of the triangle like this.

9. Start rolling from the larger side towards the smaller side and pinch the ends.

10. Preheat the oven for 7 minutes. Place the rolls in a grease the baking tray  with olive oil and bake for 10 minutes or till the top sides start to brown. Bast the creaent roll ups with butter( this makes it  more soft)

Your cresent roll ups are ready to be packed for your kiddos tiffin box.Just allow the rolls to cool in a rack for 10 minutes so that it does'nt become moist from underneath.

If you are sending it for school, you can allow the dough to slow rise in the refrigerator. Just knead, cover and place it in the fridge. You can prepare the filling and the shaping in the morning. Or you can simply bake it at night and pack it in the morning! Tastes awesome!

With love,
