NANKATAI (INDIAN SHORTBREAD COOKIES)

Hi SUPERMOMS,

I had been wanting to share some intresting,tasty and easy to bake cookies with you for quite some time now. 

I am going to start it with the most delicious INDIAN SHORTBREAD COOKIE called the NANKATAI. This is the most perfect accompaniment for tea.



INGREDIENTS:

All purpose Flour- 2 1/2 cups

Gram flour-1/2 cup
Semolina-1/2 cup

Dahi-2 tbsp

Baking soda-1/4 tsp

Ghee/ butter at room temperature -125ml

Nutmeg powder-1/4 tsp

Cardamom powder-1/4 tsp

1 to 2 tsp milk or water for kneading.

Almonds - for garnish
These are my own proportions. Though there are numerous varieties of NANKATAI, this recipe of mine was a big hit at home.


Since, I made these cookies after making ghee(clarified butter), I used the same kadai(pan) for kneading the dough.

Let us go to the procedure.

1.Mix all the dry ingredients well. Then add the ghee and start kneading. Add little milk and knead to make a smooth dough. See that there are no cracks. 



2. Line a baking tray with butter paper and roll the dough into small balls. Gently flatten it with your palms making sure that there are no cracks and arrange them in the butter paper.

3. Using fork, make an impression on the cookie. You can use your imagination here. Gently press a sliced almong in the center.


4. In a preheated oven, bake the cookies for 8 to 10 minutes. If you have shaped it thicker, then it will take longer time. It is best to remove at 8 minutes and check whether done and keep it longer accordingly as the baking time differs from oven to oven.


5. When done, let the cookies cool in a cooling rack. The cookies will firm up as it cools.


Your delicious NANKATAI is now ready to be stored in an air tight container and you can enjoy it with your hot cup of tea.


These cookies are so si ple to make, yet so much better than the store bought ones. The smell of cardamom engulfs the entire house...hmmmm...can still smell the aroma!
