Red Velvet Cream Cheese Brownies


Happy Valentine's day to all of you !
I have always wanted to try brownies with cheese and when I came across this recipe , just fell in love with it! The brownie has two layers- the chocolate one and the cream cheese one baked to get melt in the mouth delicious brownies.

I followed this recipe.

It is quite a challenge to click as I cook, so do bear with the pics. 

Red Velvet Cream Cheese Brownies : 

Preparation time : 15 minutes
Cooking time:30 minutes 
Serves : 6



All purpose flour- 3 1/4 cups
Granulated sugar-2 1/4 cups
Cocoa powder-3tbsp(sifted)
Salt-1 tsp
Baking powder-1/2 tsp
Flavourless vegetable oil-1 cup( i used olive oil)
Milk-4 tbsp
Vanilla extract-1 tbsp
Red food colouring-1 tbsp( you can use concentrated beet juice if you want)
White vinegar-2 tsp


Cream cheese-360 gms
Granulated white sugar-  3/4 cup
Vanilla extract-2 tsps


1. First, line your baking tray with butter paper and grease it well with butter.

2.Sift flour,cocoa powder,sugar,salt,baking powder in a bowl and make a well in the center.

3.In a seperate bowl, add the eggs and whisk well.

4.On top of the beaten eggs,add oil,2 tbsp of milk, vanilla extract,vinegar and the food colouring. Whisk well.

5.Pour this liquid mixture into the well of the dry mixture.

6. Using a spatula, mix gently so that all ingredients are combined. You will get a thick,oily dough like consistency.

7. Remove 3/4 cup of batter and transfer to another bowl. Add the remaining milk ,mix and keep it aside .

8. Spread the thick brownie batter into the prepared baking tray and evenly spread it out. Try and use a larger tray. I made the mistake of using a smaller tray and had to increase the cooking time.

9.Let us prepare the cream cheese layer. Add the cream cheese in hour electric mixer and beat till the cheese becomes soft and fluffy.

10. Add the sugar to the cream cheese and beat on medium high speed for 3 to 5 minutes until the mixture becomes pale,soft and fluffy.

11. Add egg one by one and beat upto 1 min after each egg.

12. Now, pour this batter on top of the brownie batter and spread to smoothen the top.

13. Now pour the red velvet batter with a tbsp. Leave some gap between each spoon.

14. Using a knife draw some swirls.

15. In a preheated oven, bake the brownies for 30 minutes at 180 degrees C or until the cheese stops bubbling . The sides starting to brown is also an indication. Do use a large tray.

16. Cool on the wire rack. I had cut them into squares and heart shape. Whatever the shape, the taste is simply finger licking good!
