Hi SUPERMOMS,
I have been thinking of baking whole wheat thins for a long time. Finally baked them today. Must admit that it is so crispy and tastes so good. It has both sugar and spice .A perfect tea time snack!
Do double this recipe if you are trying it...as it will vanish even before you realize it!
I have adapted this recipe from King Arthur Flour cookbook.
INGREDIENTS
WHOLE WHEAT FLOUR- 1 1/4 cup
SUGAR-1 1/2 tbsp sugar( castor sugar will be good.mine were large sugar crystals)
SALT-1/2 tsp
PAPRIKA- 1/4 tsp( I USED kashmiri lal mirch)
BUTTER-1/4 cup( cold and grated)
WATER- 1/4 cup + 2 tbsp( I added a few drops more as the dough was little dry)
VANILLA ESSENCE- 1/4 tsp.
Let us start our preparation.
1.Whisk flour,salt,sugar,paprika together. Grate cold butter.
2. Prepare your baking tray by lining it with butter paper.
3. Add the grated butter to the whisked flour mixture and using your finger tips start incorporating the butter into the flour. This is the most important step. The flour will look crumbly. DO not be in a hurry. Mix well.
4. Mix Vanilla essence with water and cool it in the freezer for five minutes. You can do this while you are mixing the butter and flour.
5. Pour the water inside the crumbly flour mixture and mix the ingredients till they are combined to form a smooth dough. Do not knead. Lightly flour your working space and rollout the dough thinly. Using a pizza cutter, shape them. You can also use a cookie cutter.
6. Using a fork, randomly poke each cracker. I made rectangular and square shape crackers.
7. In a pre heated oven, bake the crackers at 170 degreesfor 8 to 12 minutes. I placed the crackers in the third rack. Rotate pan inbetween for even cooking. If you have rolled out thicker, then it might take more time to bake. But do keep a watchful eye over them.
9. Allow them to cool in a rack.
Your healthy and yummy crackers are ready! They are so tasty and addictive too! I prepared some hot filter coffee and enjoyed it with these WHEAT CRACKERS!
I am planning to serve a few later with pesto and vegetable garnish! Sounds interesting???
