Bagala Bath | Thayir Sadam | Thalippu Thayir Sadam | Tempered Yoghurt Rice from TamilNadu | How to make Thayir Sadam at Home | Stepwise Pictures


Hi Supermoms,

Curd rice is the best comfort food for all ages. It is also popularly known as 'Bagala Bath'. We all know that curd/yoghurt is good for our health. It is also a great source of calcium. 'Thayir' in Tamil means 'Curd'/Yoghurt'. An Authentic South Indian meal always finishes with curd rice. On regular days, I serve rice and curd separately and my family mixes them together. Curd Rice tastes great with any vegetable, pickle or you can even enjoy it just like that. On special occasions, festivals or a potluck party, Curd Rice or Bagala Bath is prepared by mixing mashed rice with milk and curd and then tempered with mustard, green chillies and lentils. Carrot, raw mango and fruits like grapes and pomegrate are added to make it more wholesome.





Thayir Sadam | Curd Rice | Bagala Bath :

Preparation time : 5 minutes
Cooking time : 20 minutes
Serves : 2
1 cup = 250 ml cup

Ingredients :

1 cup uncooked rice ( I use sona masoori )
1/2 cup thick whipped curd
1 cup milk 
1 small carrot(grated)
2 tablespoon pomegranate seeds 
1 tablespoon raw mango (Finely chopped, if available)

To temper :

1 tablespoon oil
1 teaspoon channa dal/bengal gram
1 teaspoon urad dal/husked and split blackgram
3 finely chopped green chillies ( Adjust according to the heat of chillies)
1/2 " ginger ( finely chopped)
1 sprig curry leaves ( tear them roughly)
3/4 teaspoon mustard seeds
5-6 cashewnuts (optional)
salt to taste

Note: You can also add halved green grapes( seedless), black raisins, finely chopped cilantro if you like.

Method:

1. Cook rice with more water in a pressure cooker so that the rice can be mashed well. 
TIP: I use rice:water = 1:3. Cook upto 4 whistles in medium flame.
2. When the rice is hot, mash it using the back of a ladle.
3. Add milk little by little and loosen up the rice. 
4.Now add the curd , salt, grated carrot  and mix again.
5. In a small pan, heat oil and add the ingredients given under'to temper'in the order given.
6. Once the mustard seeds splutter, pour it into the rice.
7. Garnish with pomegranate seeds.

You can serve with your choice of pickle.

Chef Tips:

1. If you are preparing this rice before hand for picnic or potluck , add extra milk while mixing the rice and reduce the amount of curd. This helps to prevent the curd rice from turning too sour.
2. Using full cream milk adds to the taste of the rice.
3. The curd rice might soak up the moisture if you have prepared it earlier, so add 1/2 cup of warm milk before serving.
4. If making for  small children, you can add  1 teaspoon of butter to hot rice while mashing. This adds to the taste.
5. Mashing the rice well is a very important step in this preparation.
