I am so happy if I get to share the recipe of a dish on the day I prepare it. With heat increasing to unreasonable levels ( 45 degrees C) here in Delhi, salads and wraps that can be made in a jiffy are my favourites. I had made these delicious wraps today and they were so light and refreshing ! Use plenty of fresh seasonal vegetables. You can also add crumbled or cubed Tofu , Cottage Cheese if you like . I had made the popular spread -hummus for these wraps.
Preparation time : 15 minutes
Cooking time : 10 minutes
Serves : 2
1 cup =250 ml
Ingredients : ( all vegetables to be sliced length wise)
1 onion
1 cucumber
1 tomato (deseeded)
1/2 green bell pepper/capsicum
1/2 red bell pepper ( optional)
1/2 yellow bell pepper( optional)
15-20 leaves of mint/pudina leaves
1/2 teaspoon pepper powder
1 cup hummus
salt to taste
Method :
1. Spread hummus on the phulka.
2. Arrange the vegetables on one side of the phulka. Sprinkle salt and pepper.
3. Roll tightly .
4. Repeat the same procedure for the entire batch and serve.
The wrap tastes great when eaten cold also. Ideal wrap for packing in your office/school tiffin box and for summer picnics.
