The best part of summer is that 'Mangoes' are in season. So many different varieties from different parts of India. 'Safeda' variety of mango is the most common available here in Delhi , though Langda and Alphonso are also a common sight. I personally love Alphonso mangoes, but they haven't yet arrived in my local fruits and vegetable shop. I know many of you must be making juices and milk shakes out of this yummy fruit and some of you would like to have them as is ( like me).
Here is an interesting dip for your evening snack time. I chopped the mangoes in a manual vegetable processor and added them along with finely chopped tomatoes and chillies. Add fresh herbs, salt and your delicious and healthy dip is ready in no time !
Summer holidays have started and such easy dips and salad recipes are handy and can be dished out without having to struggle in the heat.
Mango Salsa | Mexican Mango Salad :
Preparation time : 10 minutes
Cooking time : Nil
Serves : 4
Ingredients :
1 mango ( peeled and finely chopped or roughly processed)
1 large tomato ( deseeded and finely chopped)
1 green chilli ( deseeded and finely chopped)
juice of half a lemon ( 1 teaspoon approximately)
salt to taste
For garnish :
finely chopped cilantro/coriander leaves
1/4 of bell pepper (finely chopped)
Method :
1. Take a wide bowl and throw in all the ingredients.
2. Mix , garnish and serve along or on top of chips, nachos, baked potato wedges , crackers and salt biscuits.
