The way we Indians love Paneer and use it various ways across our dishes, Italy has its own cottage cheese called the "Ricotta". Italians have been making Ricotta from time immemorial. Applying a thick coat of Ricotta Cheese on oven baked Ciabatta makes for an ideal starter to a long party evening. The Ricotta topped Crostini can be made to look and taste more appealing with a generous topping of olives, tomatoes and basil. One can also sprinkle Oregano and Chilli flakes depending on one's taste buds. Tomato ketchup goes very well with this appetiser.
I served these as a starter along with baked pasta. Yum!
Italian Ricotta Crostini with Olives and Cherry Tomatoes :
Preparation time : 5 minutes
Cooking time : 7-9 minutes
Serves :4
Ingredients :
1 ciabatta bread ( cut into smaller slices )
10-15 cherry tomatoes (halved)
20-25 black olives ( sliced)
200 gms ricotta cheese
10-15 fresh basil leaves or oregano( finely chopped)
2 teaspoons olive oil
pinch of salt
For garnish :
fresh herbs
Method :
1. Pre- heat oven at 180 degrees C for 10 minutes.
2. Arrange the ciabatta bread on a greased baking tray and drizzle with olive oil.
3. Toast the bread in the oven , placing them in the middle rack at 180 degrees C for 7-8 minutes or till the time, the sides of the bread turn brown, switch off.
4. Crumble the ricotta cheese and mix it well with the herbs and salt.
5. Spread the cheese on top of the toasted pieces.
6. Arrange the tomatoes and olives on top of the cheese.
You can drizzle tomato ketchup on top and serve . Your Italian party appetiser is ready !!!
Chef Tips:
1. I used store bought ciabatta bread, but you can make it at home too with this recipe.
2. If ciabatta is not available you can use regular bread also.
3. You can use fresh or dry herbs.
