As promised, I am back with another gooseberry/nellikai/amla recipe. Gooseberry is extremely good for our health and this recipe is super simple too. Use season's freshest gooseberries to make this recipe.
As markets are flooded with red carrots ( Delhi carrots) and fresh red chillies ( the long variety), I have used them along with gooseberry. The spicy red chillies and the sweet carrots balance the sourness of gooseberry and makes this dish totally delicious.
Quick and healthy stir fry that tastes great as a side dish for rotis as well as rice.
Gooseberry Carrot Stir Fry | Amla Gajar Sabji| Nellikai Carrot Poriyal :
Preparation time: 10 minutes
Cooking time : 20 minutes
Serves : 4
1 cup = 250 ml cup
1 large carrot ( Thinly sliced or cubed)
1/4 teaspoon turmeric powder
salt to taste
2 teaspoon sesame oil
1 teaspoon cumin seeds/jeera
1 large fresh red chilli Or 3-4 green chillies ( finely chopped)
1 sprig curry leaves ( optional)
pinch of asafoetida
For garnish :
handful of cilantro/coriander leaves( finely chopped, optional)
1. In a heavy bottom vessel, 2 cups of water, add the gooseberries , cover and allow it to cook for 8-10 minutes over low flame or till the time, they start to break.
2. Remove the excess water, deseed the gooseberry and set them aside.
3. Heat a pan with oil, temper with ingredients given for tempering and add the gooseberries, salt, turmeric powder and fry for 1-2 minutes only.
4. Add the carrots, mix well and cook for another 4-5 minutes.
Chef tip : Do not over cook the carrot as the taste of the dish will change. The little crunch in carrot adds to the taste of this dish.
Healthy Gooseberry Carrot Sabji is ready to be served.
