Fenugreek leaves/ Methi Kura / Vendaya keerai/ Methi leaves are so good for our health. There are plenty of ways of using this healthy greens. As dal/lentils are prepared every day in Indian homes, it is so easy to add this leafy vegetable in them.
The methi leaves are flavourful and add taste to the dal /Menthi Kura Pappu. I make this regularly at home . You can add garlic in the tempering if you are fond of it. I have tried both the recipes, with and without garlic and both taste fantastic.
A comforting bowl of dal served along with rice or rotis , make for a wholesome meal.
Menthi Kura Pappu | Fenugreek leaves Dal:
Preparation time: 10 minutes
Cooking time : 20 minutes
Serves: 4
1 cup = 250 ml
Ingredients :
To be pressure cooked :
2 cups methi leaves/fenugreek greens ( washed and chopped finely)
1 tomato ( finely chopped)
1/2 cup pigeon peas/tuvar dal/arhar dal or moong dal
2 cups of water ( adjust)
1/4 teaspoon turmeric powder
salt to taste
For tempering :
1 tablespoon oil ( I used sesame oil)
1 teaspoon mustard seeds
2 -3 green chillies ( finely chopped)
1 sprig curry leaves
2 tomatoes ( finely chopped)
1 onion ( finely chopped) ( optional)
1 -2 garlic pods ( crushed using mortal and pestle) ( optional)
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
salt ( adjust)
Method:
1. In a pressure pan/cooker, add washed methi leaves, toor dal, turmeric powder, salt, water and pressure cook for upto 3-4 whistles and switch off.
2. While the dal is cooking, heat a pan with oil and temper with mustard seeds, green chillies, curry leaves, garlic pods, onions, tomatoes, turmeric powder, red chilli powder and then add salt.
3. Let the tomatoes cook and become mushy.
4. When the oil starts to separate, switch off and set it aside.
5. Open the pressure cooker and using a hand whisk, whisk the dal and the methi leaves well.
6. Place the cooker back on low flame and add the tempered tomato mixture and once it comes to a boil, switch off.
Your simple and delicious Menthi Kura Pappu is ready to be served. They taste great along with steaming hot rice and also rotis.
