Chilli Cheese Idli

Hi Supermoms,

Whether it is served as a breakfast, dinner, lunch, snack or starter , Idlies are always a favourite. Soft and spongy idlies teamed up with chutney or sambar is one of the most satisfying meals . 

The fermented rice and lentil steamed cakes aka Idlies, is becoming popular world wide too . Enjoyed by people of all age groups, they are be served in different shapes and sizes . Even the left over idlies from breakfast can be transformed and served as a yummy evening snack . This gluten free and vegan South Indian tiffin recently got a make over in my kitchen. I am sure you have tasted chilli cheese toasts. But have you tasted Chilli Cheese Idlies?

Well, after reading my recipe, I am sure you are going to try it out. It was a block buster at my place and I am also going to make it as a starter for our pot luck party too. A crowd pleaser for sure. I used Mother Dairy Cheese spread for making a delicious cheese sauce.  Mother Dairy Cheese spread is just perfect to make lump free , creamy and delicious cheese sauce for these Chilli Cheese Idlies.  

You can make fresh batch of idlies or even use left over idlies to make this dish. Sprinkle homemade podi ( chutney powder) over the idlies to coat them well. Prepare a cheese sauce using Mother Dairy Cheese spread and milk. Add finely chopped green chillies and herbs of your choice to the cheese sauce. 

If you planning to serve it for a gathering, you can make this sauce ahead of time and refrigerate upto a day. To serve, arrange the podi idlies on a plate or serving bowl and sprinkle finely chopped vegetables and grated cheese. I always have stock of Mother Dairy Cheese cubes at home and used them to sprinkle over the idlies. Pour hot Cheese sauce on top of the idlies and serve immediately.

Chilli Cheese Idlies

Chilli Cheese Idli Recipe :

Preparation time : 10 minutes
Cooking time : 10 minutes
Serves : 2
1 cup = 250 ml cup 

Ingredients :

25-30 mini podi idlies
1/4 cup coloured bell peppers ( finely chopped)
2 Mother Dairy Cheese cubes ( grated)

For Cheese sauce :

1/2 cup milk 
200 gm Mother Dairy Cheese spread ( room temperature)
2 green chillies ( finely chopped)
1 tablespoon of finely chopped herbs of  your choice( fresh or dry)
pinch of salt ( optional)

Method :

1. Mix idlies with idli chutney powder ( milagai podi) and arrange them on a serving plate or bowl. 
Chef tip : If you do not have chutney powder, sprinkle 1/2 teaspoon of Kashmiri chilli powder over the idlies and mix. 
2. Sprinkle the coloured bell peppers and grated Mother Dairy cheese cubes on top of the idlies.
3. Heat a heavy bottom pan with milk .
4. When the milk is warm, add the cheese spread and keep whisking to avoid any lumps. 
Chef tip : Using Mother Dairy Cheese spread  is very important to get the right consistency and taste.
5. Add finely chopped herbs ( I used mint and cilantro) and chillies. 
6. Keep stirring the mixture over low flame till it becomes thick and creamy.
4. Switch off and pour the  hot cheese sauce on top of the idlies .

Your yummy Chilli Cheese Idlies are now ready to be served.
