Hi Supermoms,

We are always looking for easy, healthy and yummy snack recipes for our children, is'nt it? But getting the approval of children is a big task. Now, this recipe is a tried and tested one. They are easy to make even in the morning rush and the 'white sauce' can be made a night earlier. You can even  add fresh crunchy vegetables like capsicum, tomatoes that does not take time to cook on days you have woken up late !!! 

You can bring so many variations to this recipe. Do let me know if you try !

I often make this bread as it is a big favourite with children. A superb starter even for your get togethers and picnics.

    When you are making Pasta , noodles or soup, do serve them along with these toasties ! It would make a perfect meal !

Spinach Corn Toasties :

Preparation time : 5 minutes
Cooking time:15-20 minutes
 Serves : 4-6 


Ingredients: 

1 Garlic loaf/garlic bread(can use regular bread or hot dog rolls also)
15 spinach leaves
1/2 cup sweet corn kernels
1 cup milk
5-6 peppercorns( freshly crushed)
1/2 teaspoon oregano
1/4 teaspoon chilli flakes (adjust)
2 teaspoons flour(Maida/cornflour or Atta)
2 teaspoons butter (salted)
100 gms Mozzarella cheese(grated)



Step 1

Take a teaspoon of butter in a pan and when the butter melts add 2 teaspoons of maida and roast it lightly. Switch off and let it cool a bit.


Step 2:Add 1/4 cup of milk in this mixture and make a smooth paste. Then keep it on the stove over low flame.   The paste will start to thicken.
Step 3:Stir in one hand and add 1/2 cup milk . Boil the spinach and corn  in boiling hot water for 5 minutes and drain.
Step 4:
Add the spinach to the white base.  Add freshly ground peppercorns,chilli flakes and oregano. Adjust salt.



Step 5:
Add freshly grated mozzarella cheese(as desired) in this white sauce.Now your WHITE SAUCE is ready.
Note: You can use cheese slices if you are in a hurry. Just tear them roughly into small pieces before you add them in milk.
        


Step 6:
Cut the Garlic loaf as shown in the picture. Spread butter on both sides.Then spread the white sauce on the top layer of the loaf and keep it in the oven for baking.



Step 7:
Bake at 180 degrees C for 7  to 10 minutes depending on the thickness of the bread you are using. You can see that the top layer browns beautifully. 

Alternately, you can also toast the bread on the gas top, by greasing a pan with little butter and place the toasties on the pan and cover the pan for just around 5 minutes and then serve!



Step 8:

Your delicious SPINACH CORN TOASTIES are ready to be cut and packed for your kiddos or can be served as an evening snack or a party starter. Your little ones will love  you for this.

It is delicious when eaten hot or cold! 

These spinach corn toasties can be made with pav buns( half them), burger buns and also regular bread. You can make it with whole wheat buns , baquettes and sour dough breads also.

You can also add mushrooms, fresh herbs for added taste.
