Cilantro or Coriander leaves are rich in anti -oxidants and is a rich source of minerals like potassium, calcium,manganese, iron and magnesium. These herbs are also low in calories and the oil from these herbs have many healing and anti-septic properties. In Indian Cooking, this herb is always used as the final garnish. In this recipe 'Hari Dhania Ki Sabzi' , fresh coriander is cooked along with gram flour/besan that makes the dish more wholesome. It is a healthy, gluten free and vegan side dish for roti or rice. Next time when you buy a fresh bunch of cilantro, do try this tasty and healthy dish.
Hari Dhania Ki Sabzi ( Fresh Coriander leaves Dry Curry):
Preparation time : 5 minutes
Cooking time : 15 minutes
Serves : 2
1 cup = 250 ml cup
Ingredients :
1 small bunch of cilantro OR 1 cup cilantro ( washed and finely chopped)
2 tablespoons gram flour/besan
1 potato ( boiled and mashed, optional)
1/8 teaspoon turmeric powder
salt to taste
To temper :
2 teaspoons sesame oil
1-2 green chillies ( finely chopped)
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds/jeera
pinch of asafoetida
Method :
1. Heat a medium size pan with oil and temper with mustard seeds, cumin seeds and asafoetida.
2. Add the gram flour, turmeric powder and roast it over low flame for 5 minutes over low flame till it turns fragrant.
3. Add the coriander leaves and potatoes ( if using ), salt , cover and cook for another 4-5 minutes.
Your simple and refreshing Hari Dhania Ki sabzi is ready.
Chef Tip :
You can sprinkle water while cooking if the sabzi is too dry. Use fresh cilantro leaves for the authentic taste.
A delicious accompaniment to rotis/phulkas/chapathi or rice.
