Trying different recipes as side dish to Indian flatbreads like phulka/paratha/chapathi is always fun as well as challenging. Recently I tried a dish that was so tasty. It is called Vindaloo. Though this is a non vegetarian dish, I have created a Vegetarian Version .
It turned out brilliantly textured and the taste was simply lip smacking and perfect side dish too.

Vindaloo Vegetable Masala :
Preparation time : 6-8 hours
Cooking time : 40-45 minutes
Serves : 4-6
1 cup = 250 ml
Ingredients :
1 large Potato (cubed)
1/2 cauliflower ( chopped into florets)
1 carrot (peeled and chopped)
10-15 french beans ( cut into 2” pieces)
1/4 cup peas ( shelled)
2 onions ( thinly sliced)
100 gms paneer/cottage cheese ( cubed)
Vindaloo Masala Mixture :
1 tablespoon sesame oil or mustard oil
1 tablespoon Red Chilli Powder
1/4 teaspoon Turmeric powder
1 teaspoon coriander powder
1/2 teaspoon Jeera/cumin powder
1/2 teaspoon Black Pepper Powder
1 teaspoon Garam Masala
3/4 cup Tomato puree ( or puree 2 large tomatoes)
10 garlic pods( crushed into a paste )
3 " ginger piece ( grated finely or crushed into a paste)
1 tablespoon Jaggery ( powdered)
1 tablespoon Tamarind juice ( from marble size tamarind soaked in hot water)
2 teaspoons Vinegar ( optional)
salt to taste
For tempering:
1 teaspoon Mustard seeds
2 teaspoons Oil ( mustard or sesame)
For garnish :
1/4 cup coconut milk ( optional)
Finely chopped cilantro
Method:
1.In a large bowl add all the ingredients given for the Vindaloo Masala and mix well.
2.Add the chopped vegetables , mix and cover the vessel using a lid /cling film and allow it to marinate.
3.Heat a pan with oil and temper with mustard seeds.
4.Add the marinated vegetables and 1 cup of water.
5.Cook over low flame till the vegetable are well cooked( fork tender) but not mushy.
Chef tip: Adjust water quantity.
6.Switch off.Stir in coconut milk( optional) and garnish with cilantro leaves.
Your delicious Vindaloo Vegetable Masala is ready to be served with steaming hot rice , rotis or phulkas.
