'Pesara Manga' literally means 'spice mixed raw mango'. This instant mango pickle is quite popular in many Indian households. Also, it is a mandatory dish in the menu of most Tamil marriages. The pesara manga is a great accompaniment to curd rice. During summers, when the raw mango is available in plenty, I never fail to make this pickle.
It is so simple to make and also tastes so good. I use Kashmiri red chilli powder that gives great colour to the pickle.
A must try when you find raw mangoes.
Preparation time : 10 minutes
Cooking time : 2-3 minutes
Serves : 10
1 cup = 250 ml cup
Storage : Keeps good for upto 7 days when stored in a clean, dry and odour free container
Ingredients :
2 raw mangoes ( medium size ) OR 2 cups raw mango ( finely chopped)
3-4 teaspoons Kashmiri chilli powder ( adjust according to your spice requirements)
1/2 teaspoon fenugreek seed powder/methi seeds powder
salt to taste
Note : You can add 1/2 teaspoon of powdered jaggery if you like ( optional)
1/4 cup sesame oil
1 teaspoon mustard seeds
Method :
1. Spread the chopped mango on to a wide plate.
2. Add the spice powders and salt over the mango.
3. Heat the sesame oil in a big iron ladle or small pan , temper with mustard seeds and pour it over the mangoes.
4. Mix well and transfer it into a clean and dry container.
5. You can use them immediately and also upto a week.
Chef tip : I always keep them refrigerated .
Delicious home made pickle is ready so quickly.
