I had shared the above picture on my instagram stories and many of you have been asking me for the recipe. Well, I actually started with the plan of making Kaju Pista Roll using my friend Uthra's recipe. But while grinding cashews, instead of dry powder that the recipe called for, it became oily and clumpy. I added water and ground cashews into a paste and was wondering what to do with it .
My Mom In Law came to my rescue and told me that in our marriage functions, they serve a special sweet called 'Coin Mudhiri' or 'Mundhiri Surul' that is served covered with butter paper and is slightly chewy than the regular cashew roll or the Kaju Katli.
This encouraged me to go ahead with the recipe that my friend gave, except that the cashews were ground with water.
The outcome was satisfying and everyone at home enjoyed it. Without further delay, let me share this two ingredient recipe with you all.
Mundhiri Surul | Kaju Roll:
Preparation time : 5 minutes
Cooking time : 15 minutes
Makes : 20 Mundhiri Surul /Kaju Roll
Storage : Stays good for 3-4 days when stored in a clean , dry, odour free , air tight container
Special vessel/equipment : rolling pin, butter paper/parchment paper
Ingredients :
1 cup cashew nuts +1/4 cup water
1/2 cup sugar + 1/4 cup water
Method :
1. Grind the cashews using 1/4 cup water.
2. Heat a wide pan with sugar and water.
Chef tip : Cook over low flame only.
3. When the sugar melts completely add the cashew mixture .
4. Keep stirring continuously till the mixture comes together and is non sticky.
Chef tip : This is the most important step as if you remove earlier, it will be very sticky and you will not be able to shape. So, cook till they is one non sticky lump.
5. Switch off gas and allow it to cool for 5-7 minutes.
6. When the mixture is bearable to touch, knead the cashew dough.
7. Transfer it to a butter paper and flatten it using your hands .
8. Close the butter paper and roll it out thin using the rolling pin.
9. Cut them into vertical strips and roll them.
Chef tip : You can grease your hands with ghee if required.
Chef tip : Alternatively, you can pinch small portions of the dough , roll and flatten to make 'Coin Cashews' and pack them by placing it in a small piece of butter paper. You can use your creativity to shape and pack them.
Your two ingredient Cashew Roll/ Mundhiri Surul is ready.
