The schools are re-opening after the winter break this week. Many of you must already be gearing up for the new session. Packing healthy lunch boxes for your little or the not so little ones are surely on the top of your mind.
Sprouts are not something that the kids really enjoy. But considering the health benefits of sprouts, I find interesting ways to add it to the weekly menu. Today, I am going share an easy and delicious recipe of sprouts that you can make for your loved ones.
The recipe is so simple. Grind the sprouts to a smooth batter adding very little water. Make mini pancakes. Add in your own toppings and customise the pancake to your child's liking. I added cheese slices and paneer/cottage cheese.
You can add finely chopped carrot, bell pepper, green chilli while grinding the batter if you are making this for bigger kids. You can serve them like open toasts or close them with another pancake and make it a 'Panwich'.
I sprinkled some dried oregano and chilli flakes on top of the cheese and it added so much flavour to the panwich.
Sprouts Panwich :
Preparation Time : 10 minutes
Cooking time : 10-15 minutes
Serves : 2
1 cup = 250 ml cup
Ingredients:
For the batter:
1 cup Green Mung /green gram sprouts
salt to taste
Optional add-ons:
1/2 green chilli ( optional)
1/2 carrot ( chopped)
handful cilantro leaves ( optional)
pinch of asafoetida ( optional)
Other ingredients :
1-2 Cheese slices
1-2 Cottage cheese slices
1/2 teaspoon Dry Italian seasoning
1/4 teaspoon Chilli flakes
1 teaspoon oil to grease
Method :
1. Grind the green gram sprouts into a smooth batter using 1/4 cup water .
Chef tip : You can add vegetables while grinding .
2. Add salt and mix well.
3. Grease and Heat a tava/flat pan .
4. When the tava is hot, just spoon the batter to make mini pancakes.
Note: Do not spread it thin.
5. Flip and cook both sides.
6. To assemble the panwich, to one side of the pancake add cheese slices , finely chopped bell pepper ( optional) and sprinkle the seasoning.
7. Place another pancake on top and your panwich is ready to be packed .
Chef tip : If your child likes melted cheese, you can assemble the panwich on the tava itself. This helps the cheese melt.
