STORING COCONUT
Hi SUPERMOMS,
Having grown up in a tropical state with 12 coconut trees around the house, coconuts were such a common fruit. Since it is home grown, it was so tasty too!
Did not realize it's value till I shifted to Delhi. Not only are they so expensive ( paid ₹50 for a tiny one!) ,but since they aren't stored properly, half of them turn out to be rotten. That can be really stressful!
I found this hack of storing coconut very handy.
Thanks to my mom for sharing this tip with me.
Just three steps and you can use grated coconut in all your recipes.
1. Grate the coconut. In a large wok/pan, dry roast the grated coconut. You can see that the moisture in the coconut is drying up. Keep tossing so that the heat evenly spreads. Do not overdo . Let it not discolour.
2. Cool the grated coconut by spreading it in a muslin cloth or paper.
3. Once completely cooled, pack in a zip lock cover and freeze.
