Gluten Free Rolls- an ideal tiffinbox recipe for summer

Hi SUPERMOMS,

Kids tiffin box during summer ,needs to be carefully packed. I try and avoid deep fried and extra spicy food. But I also do not want my kids to get the tiffin box unfinished!!

These rolls fulfill both the mother and child's expectations. Simple,light and healthy!








INGREDIENTS FOR THE CREPE:

1. Raw rice -1 cup
2. Husked black gram( urad dal)-1/4 cup
3.puffed rice( poha)-1/4 cup
4. Fenugreek seeds-1 tsp

For the filling:

You can use vegetables of your choice and the spices of your choice.

I used Capsicum, carrot,tomatoes and onions. 
Soya sauce- 1 tsp
Chilli sauce(red)-1 tsp
Vinegar- 1 tsp
Pepper- freshly ground
Salt to taste
Oil/ghee/butter( I used clarified butter aka Ghee)

METHOD

1.Soak all the ingredients for the crepe for atleast 3 hours. Grind it to a fine batter and rest it for 2 to 3 hours.if you are living in cold temperature,then rest it longer. Heat a flat pan or Tawa after brushing it with sesame oil. When the tawa is hot,Pour a ladle of batter in the centre ,then in a clockwise motion,spread the batter to form a thin circle as shown in the picture. Drizzle some oil or Ghee( optional)


2. Prepare all your crepes.



3. For the filling, heat pan with a tsp of oil, add all the vegetables,salt,pepper and  stir. The vegetables need not cook fully as the light crunch in them will add to the taste.Now add  soya  sauce,vinegar and chilli sauce. In high fame,keep stirring for a minute till the excess water evaporates and switch off.


4. Now make the roll. Place the stuffing at one inch away from the corner.


5. Fold both the sides and roll tightly.



Your delicious GLUTEN FREE ROLLS are ready to be packed for lunch box or served warm to your family and friends as appetisers!
