It has been a while since I blogged.
Summer has arrived with it's fury and it has been increasing difficult for me to stand in my kitchen after 10 in the morning. I like to prepare sauces,dips and juice concentrates(Sharbat) etc., which saves me a lot of time.
When we think of sauces, the first ingrefient that comes to one's mind is tomatoes. But giving tomatoes some rest and preparing this herbed sauce is a great option and quite refreshing.This sauce stays good for a week ,so you can send it for school tiffin box with bread rolls, roti rolls ,quesadillas and can have it with rice.
INGREDIENTS
Cilantro (coriander)- 1 large bunch
Ginger- 2 tbsp(you can grate if you want- you can increase or decrease the ginger quantity according to your family taste preferences)
Capsicum- 1 small
Green chillies-4 ( again, you can adjust according to taste)
Tamarind pulp-1/4 cup
Salt to taste
Oil -2 tbsp
Mustard seeds or powder for tempering
Let us start preparing our thokku or sauce.
METHOD
1. Roughly chop the cilantro,capsicum,green chillies,ginger and pressure cook without water in medium flame for a single whistle. The water content in capsicum in preventing burning . Allow it to cool.
2. Transfer the mixture to a food processor or mixie . Add the tamarind pulp and grind to a fine paste.
3. In a large pan, heat oil and add mustard seeds/ powder , a pinch of fennel powder( this is to preserve the sauce and also cools our system). When they splutter, add the ground paste.
4. Add salt . Let it cook on medium flame till the excess water evaporates and the sauce leaves oil on the sides of the pan. Switch off and allow it to cool. Later, store it in a jar or an airtight container and refrigerate. Use as and when required.
Your healthy sauce is ready in minutes!!!
This recipe is handed over to me by my MOM! She used to pack this thokku in pickle bottles for my brother to carry to his hostel!
