Instant Rice Dhokla/ Gluten free Indian Savoury Cakes :

Serves : 2-4
Preparation time : 10 minutes
Cooking time: 20 minutes

INGREDIENTS:

1. Rice Rava - 1 cup ( 250 ml)
2. Fruit Soda - 1 sachet (1 tsp)
3. Curd ( whisked well)- 1/2 cup
4. Roasted Gram Dal/ Chutney Dal / Pottukadalai - 1 tbsp
5. Salt to taste

SPICE PASTE

Grind the following in a mortar and pestle or mixer.

1. Ginger - 1 inch piece
2. Green chillies -2

TEMPERING

1. Oil - 2 tsp
2. Mustard seeds - 1/2 tsp
3. Cumin seeds -1/2 tsp
4. Bengal gram dal/ Channa Dal-1/4 tsp
5. Green chillies - chopped - 2

GARNISH

1. Cilantro/ Coriander - Finely Chopped
2. Fresh Coconut - Grated ( optional)

METHOD:

1. In a bowl  mix the Rice rava ,Roasted  Bengal Gram with  the curd. Add 1 cup of water and mix well.

2. Add the spice paste and salt. Mix again and let it rest for 5 minutes. The consistency  of batter should  be like the Idli Batter .,ie. Thick at the same time flowing.

3. Grease a cake pan or any other vessel and get your steamer ready. You can also use your pressure pan without the whistle.

4. Now add the fruit salt, mix well and pour the batter in the greased vessel.

5. Steam for 15 minutes or till a toothpick inserted in the centre of the Dhokla comes out clean. Let it cool for 5 minutes. Demould and slice them into squares or any other shape, without seperating them.

6. Heat oil in a small pan and add all the ingredients for tempering. When the mustard seeds splutter, pour the tempering uniformly on top of the Dhokla/ Savoury Cake.

7. Garnish with Cilantro and coconut( Optional).

Your delicious and healthy Rice Dhokla is ready !

CHEF TIPS :

1. Add the Fruit Salt just before you pour the batter into the cake pan. The batter will bubble up and become airy. Mix quickly and steam!
2. You can slice the Dhokla after tempering too. Giving the cut before is to help the essence of tempering seep into the Dhokla.
3. I have not added sugar in the batter as my family prefers it that way. But if you are fond of sweet, do add a tsp of sugar in the batter. It will taste really good.
4. You can pack this snack for tiffin box too. The taste gets even better.

HAPPY COOKING!!!

With love,

MASTERCHEFMOM
