Diwali preparations are in full swing?
So much of Shopping, Cleaning and lighting.... right? You must also be thinking of gifting some goodies for friends and relatives. It is always a great idea to gift homemade goodies.
Today I am sharing an easy yet very tasty dessert that also looks amazing !
It hardly takes any time to make and if you are planning to make a large batch, then " Fresh Coconut Laddoo " is a great choice.
You can use ready made dessicated coconut but I have used freshly grated coconut for taste. Fresher the better !
Fresh Coconut Laddoo :
Preparation time : 10 minutes
Shaping the laddoos: 15 minutes
Makes : 15 Laddoos
Special Equipment : Coconut Scrapper
Ingredients :
1 Coconut ( grated )
2-3 tablespoons of Condensed Milk ( adjust according to the size of your coconut)
1 tablespoon Milk Powder
1/4 teaspoon cardamom powder(optional)
5 Almonds/Pistachios ( Blanched and slivered or grated for garnish)
METHOD:
1. Grate the coconut using the coconut scrapper for snowwhite laddoos.
2. In a wide non stick pan, heat the grated coconut in low flame for 2 to 3 minutes only . Be careful not to brown the coconut. This step is to remove the extra moisture in the coconut. Keep stirring and after you switch off remove the pan from the flame and transfer it to a tissue paper/ dry kitchen towel.
3. Let it cool down . Set aside two tablespoon grated coconut in a plate for rolling and covering the laddoos. With the rest of the grated coconut ,add milk powder, cardamom powder(optional), thinly sliced dry fruits(optional) and mix well. Now add the condensed milk, mix and make Laddoos. Roll them over the grated coconut and garnish with dryfruits.
TIP: If it is too sticky to make laddoos, add milk powder. If it is too dry, add little condensed milk.
Line a gift box /sweet box with butterpaper, arrange the laddoos beautifully . They are now ready to be gifted to your friends this Diwali.
