Popeye Taco | Spinach Breakfast Tacos |Glutenfree and Vegan Recipe


Hi Supermoms,

You must have guessed today's recipe with it's name! Right? 

Spinach is back in season ! They are absolutely essential for growing kids and also their mummies...so much of 'iron' and other nutrients. But the biggest problem that most mothers face is that 'how to add this vegetable in the daily diet of children' as some of them completely dislike spinach.

I do face the same problem and the only way is to camouflage this healthy vegetable and make a  colourful and tasty dish. So, I made these 'Popeye Tacos' today for breakfast and it was absolutely loved by all.

I have used the Vegan, Gluten free, Fermented Dosa batter( Rice pan cake batter) to make these tacos. 

I have also used lots of fresh vegetables as the filling. Can it get better?

A healthy recipe for weight watchers too.  






POPEYE TACO | SPINACH TACO :

Preparation time : 15 minutes
Cooking time : 20 minutes
Serves : 4
1 Cup = 250 ml
Special Vessel : Tawa/ pan 

Ingredients :

For the taco:

1/2 Cup Spinach Puree ( Process fresh spinach to make puree without adding water)
1 teaspoon Olive Oil ( or oil of your choice)

For the filling :

1 Cup Paneer Bhurji Masala ( For Vegan option use Tofu)
1/2 Cup Boiled Corn Kernels
1/2 Cup Boiled Peas/ Green Channa (if in season)
1 finely chopped red onion
2 teaspoon Chilli sauce ( adjust)
Salt to taste


METHOD :

1. Mix the spinach puree with the dosa batter.

                                     

2. Heat the tawa. Pour a ladle of batter and spread just like pan cake. You can brush little oil on the sides. Let it cook on both sides.


3. Remove and allow it to cool in a rack.Repeat the same for the other tacos.  

TIP: If you want the tacos to be crisp, remove the grill rack from the oven and preheat the oven  for 10 minutes at 180 degrees C. Now arrange the cooked tacos upside down with the centre of each taco placed between two grill rods and the edges hanging. Bake for 5 minutes only. You will see that they become crisp and also hold shape. This is an optional step. If you do not have an oven, then proceed with the next step.



4. Get your paneer bhurji and vegetables ready. Just when you party is going to start or when every one is ready for breakfast, heat the vegetables and serve hot. Garnish with the sauce.

TIP: You can mix the chilli sauce with the corn-peas-onion mixture. You can also add fresh herbs.
