Sama Rice/Samak Chawal is a seed of a grass that grows amongst the paddy crops. It is eaten as a 'rice substitute' during fasting days of Navratra in the Northern states. Sama rice has a rich source of minerals and vitamins and is gluten free. It is also high in dietary fiber and so is healthy replacement to rice. Here is a delicious recipe that you can make easily for any occasion. If you are vegan, you can substitute dairy with coconut milk, soy milk or any other 'nut milk.
Sama Rice Kheer | Samai Arisi Payasam | Samak Chawal Ki Kheer :
Preparation time : 30 minutes
Cooking time : 20 minutes
Serves : 2
Special Vessel : Pressure Cooker
Ingredients :
1/2 cup Sama Rice/Samvat Chawal/Samai Arisi
1 Cup water
2 Cups Milk
1/4 teaspoon Cardamom powder
3 tablespoon sugar ( adjust according to your taste)
1 teaspoon Ghee/Clarified Butter
5 to 10 Cashewnuts for garnish
METHOD :
1. Soak the Sama rice in water for 30 minutes.
2. Close the vessel and pressure the same for 3 to 4 whistles. The Sama rice will look like this.
3. Add milk little by little and mix well to get a porridge like consistency. Now, keep it in low flame . Add the cardamom,sugar and let the mixture simmer for 5 to 7 minutes. Switch off.
4. Heat ghee/coconut oil in a small pan or ladle and roast the cashewnuts.
Tip: If you want to avoid ghee/oil,dry roast the cashews.
Garnish the kheer. Your delicious Kheer/Payasam is ready!
