The best thing I like about the Indian Summer is my natural craving to enjoy fruits. Fruit and Vegetable Salads keeps you light, hydrated and active through out the day. Watermelons are available in plenty and today I made this popular , simple and tasty 'Watermelon Feta Salad'. If you are not able to get Feta cheese in your local grocery store, you can soak cottage cheese/paneer in a cup of water with half teaspoon of salt overnight in the refrigerator. The taste of the soaked cottage cheese justifies that of Feta. I have also added garden fresh herbs like basil, oregano, thyme , mint to naturally season the salad.
Watermelon Feta Salad :
Preparation time : 15 minutes
Cooking time : Nil
Serves : 2
1 cup = 250 ml cup
Ingredients :
2 cups watermelon (deseeded cubed watermelon )
1 English cucumber ( cubed)
1 pomegranate
50 grams OR 1/4 cup Feta/Paneer/cottage cheese ( cubed)
2 teaspoons green/black olives ( sliced)
15 basil leaves ( chopped)
15 oregano leaves ( or mint)
For Vinaigrette:
1 lemon ( freshly squeezed juice)
1 teaspoon honey
2 teaspoons virgin olive oil/odourless oil
1/2 teaspoon dry herbs
4-5 peppercorns ( ground it using mortar and pestle)
salt to taste
For Garnish :
dry roasted flax seed/ sesame seeds/ sunflower seeds
Method:
1. To prepare the vinaigrette, squeeze the lemon juice in a bowl, add honey, pepper, dry herbs salt and mix well using a balloon whisk/hand whisk.
2. Slowly add the olive oil and keep whisking the mixture till the oil is well incorporated.
3. Your vinaigrette is ready.
4. In a large bowl, mix all the other ingredients , pour the vinaigrette and toss well .
5. Garnish and serve.
Your refreshing spring salad is ready in minutes !!
