Elephant Foot Yam is filled with so much of health benefits. It is tasty and can be used in a variety of dishes. I have earlier shared the 'Senai kizhangu Masiyal' recipe and Bihari Suran Chutney recipe with you all. Hope you have tried them.
Today's recipe is a simple stir fry of the yam, but do not under estimate the taste. It tastes delicious !! Before working with yam, grease your hands well with oil as some varieties of yam causes itching of the skin. Also, squeeze juice of a lemon over the yam and mix well before using it in any preparation.
An interesting and healthy addition to this recipe is addition of Murungaikeerai Milagaipodi ( Moringa leaves spice powder) . It adds so much flavour to the dish.
Kerala Style Chena Mezhukupuratti | Yam Fry | Senaikizhangu Fry :
Preparation time: 15 minutes
Cooking time : 30 minutes
Serves : 4-6
1 cup = 250 ml cup
Ingredients:
500 gms Elephant foot yam ( peeled, washed and finely chopped )
juice of 1 lemon ( to squeeze over the yam before steaming)
1/4 teaspoon turmeric powder
1/2 teaspoon red chilli powder
1 teaspoon murungai keerai milagai podi
salt to taste
For tempering :
1 tablespoon sesame oil
1/2 teaspoon mustard seeds
1 sprig curry leaves
Method :
1. Steam cook the yam till they are fork tender.
2. Heat a pan with oil and temper with mustard seeds and curry leaves.
3. Add the steamed yam, salt, turmeric powder, chilli powder and murungai keerai milagai podi.
4. Stir well and fry over low flame till the yam is well panfried and crispy . This step will take 10- 12 minutes.
Your yummy and healthy Chena Mezhukupuratti is ready.
