' Salavai' means ' to whiten' in Tamil and as the chutney looks whiter than the regular coconut chutney , it is called Salavai Chutney. It is healthy and tasty as coconut and cashew nuts are the main ingredients. You can temper with the usual chutney tempering( mustard, urad and curry leaves) or can simply temper with fennel seeds . Simple and tasty chutney recipe that can be made within minutes.

Chettinad Salavai Chutney:
Preparation time : 15 minutes
Cooking time : 5 minutes
Serves : 4
1 cup = 250 ml cup
Ingredients :
1 cup fresh coconut ( finely chopped)
1/2 cup cashew nuts ( soak in water for 15 minutes)
3-4 green chillies
water ( adjust)
salt to taste
To temper :
1 teaspoon sesame oil
1/2 teaspoon fennel seeds
Method :
1. Grind coconut, cashew nuts and green chillies smoothly adding little water at a time.
Chef tip: Adjust the water quantity depending upon the chutney consistency you like.
2. Heat oil in a small pan or ladle and temper with fennel seeds.
3. Add it to the chutney , mix and serve along with idli/ dosai or upma.
