Simple traditional recipes are the best when it comes to everyday cooking. You can make these dishes so quickly and it also tastes great. Spinach is full of health benefits and this Kootu is a great way to add them to our diet.
I have earlier shared many Kootu recipes with you all. 'Kootu' in Tamil, literally means 'Mix' . Since many ingredients ( vegetables) are mixed together into one stew, it is commonly called Kootu. As we use curd or thick Buttermilk( Mor) in this recipe it is called as 'Mor Kootu'.
Kootu pairs well with rice . This Mor Kootu tastes delicious with Vathal Kuzhambu rice.

Thanjavur Style Keerai Mor Kootu
Preparation time : 10 minutes
Cooking time : 15-20 minutes
Serves : 4
1 cup = 250 ml cup
Ingredients :
2 cups spinach ( washed and finely chopped)
1 cup thick curd ( whisked )
1/8 teaspoon turmeric powder
salt to taste
To grind :
1/4 cup coconut ( chopped)
2 green chillies
1 teaspoon jeera/cumin seeds
1 teaspoon roasted gram ( optionally, you can add 1 teaspoon of rice flour)
To temper :
1-2 teaspoons oil ( coconut oil or sesame oil)
1/2 teaspoon urad dal/split and husked black gram
1/2 teaspoon mustard seeds
pinch of asafoetida
Method :
1. Add the washed spinach into a thick bottom vessel.
Chef tip : Make sure to finely chop the spinach , as it will be easier to mash the spinach and this will help to give the kootu a great texture.
2. Add salt, turmeric powder and 1/2 cup water.
3. Cover and cook over low flame, till the spinach is cooked .
Note: This step will take around 10 minutes.
4. While the spinach is cooking, add all the ingredients given under ' to grind' into the jar of a mixer and grind to a fine paste using little curd and set it aside.
Chef tip : You can add 2 tablespoons of curd.
5. Once the spinach is cooked, mash it gently using a wooden hand whisk ( Mathu) .
6. Add the ground paste , whisked curd and cook over low flame for 3-4 minutes only and switch off.
7. Heat a small iron ladle or a pan with oil and temper with ingredients given for the same.
8. Pour it into the prepared spinach stew and switch off.
Your delicious Keerai Mor Kootu is ready to be served.
