Hi Supermoms,
'Dosai' or the Indian Crepe can be made using so many different varieties of grains and pulses. You can add vegetables , spices and flavours of your choice and personalise it. Today, I am sharing another tasty and wholesome dosai variety using the cracked wheat/ broken wheat more popularly known in India as 'Dalia' or 'Wheat Rava'.
This dosai does not require any fermentation and can easily be your week day breakfast or dinner. For those who do not enjoy rice at night, this dosai is just perfect. You can serve it with a simple vegetable stew or vegetable kurma .
Samba Godhumai Rava Dosai | Dalia Dosa Recipe :
Preparation time : 4 hours
Cooking time : 5 minutes ( per dosai approximately)
Makes : 27-30 dosai
1 cup = 25 ml cup
Ingredients :
2 cups Godhumai Rava/broken wheat/dalia
To be soaked together:
1 cup tuvar dal/pigeon peas
1/2 cup channa dal/ Bengal gram
1/4 cup urad dal/husked and split black gram
4 dry red chillies ( adjust according to your spice preference)
Other ingredients :
1/4 teaspoon hing/asafoetida
10 curry leaves ( roughly torn, optional)
1 tablespoon sesame oil ( to cook the dosai)
salt to taste
Method :
1. Wash and soak broken wheat in a vessel for 3 hours.
2. Wash and soak the dals together along with red chillies .
3. After the soaking time, first grind the dals coarsely and transfer it to a wide bowl/vessel.
4. Next, grind the broken wheat finely and add it to the ground dal mixture.
Chef tip: Add water to grind the mixture smoothly. Grind the batter to a pouring consistency, just like the regular dosai batter.
5. Add asafoetida, salt and mix well.
6. Allow the batter to rest for at least 1 hour.
8. To make the dosai, heat tava /dosai skillet.
9. Grease the skillet with sesame oil using a cloth or kitchen tissue so that the oil spreads uniformly.
10. Once the tava is hot, pour a ladleful of batter and spread in concentric circles using the back of the ladle.

11. Drizzle oil on the sides of the dosai and allow it to brown on the sides.
12. Flip and cook on the other side .
13. Repeat this method to make more dosai.
Your wholesome Samba Godhumai Rava Dosai is now ready. I served it along with a yummy
' Vellai kurma' ( white curry).
