Curried Cauliflower and Turmeric Soup Recipe

Hi Supermoms,

How are you all? 
This year, winters have set in earlier than usual . It means three things - lots and lots of warm clothes and food,  lesser day light  and adjusting to the new work schedule. To be frank, almost all my time is divided between regular household chores and cooking.  In the remaining time that I get, I simply dream. No, really, I mean it and I am trying my best to focus, to motivate myself to share the recipes that I create and cook. 

Will you believe me if I told you that this is the third time I am sitting down to share this particular recipe alone and I just hope I will successfully share it with you 😄.

Cauliflowers that I get during winter months taste the best. I use them almost everyday in my cooking. I had made this roasted cauliflower soup sometime back and it was so tasty.

Here is the simple yet delicious Curried Cauliflower Soup Recipe , that is so comforting and delicious. 

The roasted onions, garlic and cauliflower gives this soup great flavour.  A must try when the best tasting cauliflowers are in season. 

Curried Cauliflower and Turmeric Soup Recipe

Curried Cauliflower and Turmeric Soup Recipe :

Preparation time : 10 minutes
Cooking time : 20-25 minutes
Serves: 4
1 cup = 250 ml cup

Ingredients :

For boiling ( puree):

2 cups cauliflower ( finely chopped)
1 onion ( roughly chopped)
1 garlic ( chopped)
1/2" ginger ( chopped)
2-3 black peppercorns
1 clove
1 green cardamom
1/4 teaspoon turmeric powder or 1/4 " fresh turmeric root 

For roasting :

1 cup cauliflower ( cut into tiny florets)
1 small onions ( thinly sliced)
1 garlic pod( finely chopped)
1/4 teaspoon turmeric powder
1/4 teaspoon curry powder ( you can use  dry red chilli powder if you do not have curry powder)
2 teaspoons ghee/clarified butter or salted butter 
salt to taste

For garnish :

roasted onions ( thinly sliced) , cauliflower and scallion greens( spring onion greens), fresh cream ( optional) or coconut milk.

Method :

1. Heat a heavy bottom vessel or pan with 3 cups water and when they start boiling all the ingredients given under ' for boiling'.
2. Let it cook for 5-7  minutes over low flame and switch off.
3. Drain the excess water and grind the vegetables to a smooth paste.
Note : If you are using fresh turmeric, please remove the turmeric slice before grinding. 
4. Heat a kadai/pan over low flame with ghee and add the garlic . 
5. When the garlic turns light brown add the onions and fry them for 3-4 minutes, stirring continuously over medium flame.
6. Now add the cauliflower florets and fry them for 3-4 minutes over medium flame.
Chef tip : You can add finely chopped fresh herbs of your choice to flavour the cauliflower. 
7. Add the turmeric powder, curry powder, salt and cook till they are cooked and well roasted.
8. Remove 1-2  teaspoons of this cauliflower- onion mixture and set it aside for garnishing.

9. Stir in the pureed cauliflower mixture and add the vegetable stock( drained water from boiled cauliflower).
10. Taste and adjust salt and spice. Let them simmer for 5-6 minutes over low flame and switch off.
11. Garnish with scallion greens or herbs of your choice .
Note : You can stir in fresh cream or coconut milk to make it more tasty.
