My heart swells with happiness when I see my idli/dosai batter transform into soft and fluffy idlies. Idlies made from freshly fermented batter is the best one and when served with a good accompaniment it is even more delicious.
Also, I always grind a large batch that will last for 2-3 days. So, if I make idli one day, the same batter transforms into dosai, paniyaram, uttapam , kal dosai/set dosai etc., 😀 for the other days. What helps me to bring freshness to the ( same) batter is the new and refreshing chutneys or other side dishes.
This week, I tried some new varieties of chutney that are easy to make, healthy and at the same time - different and interesting.
In fact, I had a great time playing the #foodquiz with my readers in instagram and facebook . I posted the above picture and asked them to identify the main ingredients in the chutney. The responses were so interesting and innovative.
I am more than thrilled to share the recipe of my Mint and Cashew Chutney .
Mint Cashew Chutney | Pudina Kaju Chutney :
Preparation time : 30 minutes
Cooking time : 5 minutes
1 cup = 250 ml cup
Storage : Stays good for upto a day when refrigerated
Special Equipment/vessel : mixer/food processor with small jar attachment
Ingredients:
1 cup mint leaves
2-3 green chillies ( adjust)
1/2" ginger ( chopped)
20 cashew nuts
1 tablespoon roasted gram ( optional)
salt to taste
For tempering :
2 teaspoons oil
1/2 teaspoon mustard seeds
1/2 teaspoon urad dal/ husked and split black gram
1 sprig curry leaves ( torn roughly)
1-2 dry red chillies ( optional)
Method :
1. Soak cashew nuts and roasted gram in warm water for 30 minutes.
2. Drain them and add it to the jar of a mixer along with mint leaves, ginger , green chillies and salt to taste.
3. Grind it to a smooth chutney by adding 1/2 cup water , little at a time.
Chef tip : You can adjust the amount of water .
4. Transfer it to a serving bowl and temper with the ingredients given for the same.
Your delicious and flavourful mint cashew chutney is now ready. You can also add fresh coriander leaves/cilantro along with mint if you like the taste.
