Banana Walnut Cake

First of all, a big hug to each and everyone of you. I am truly overwhelmed by your love and response to my post about the release of my first cookbook ‘My Genius Lunch Box’ published by Penguin Random House. The book is officially releasing on 13th July,2020. 

I have repeatedly shared that it is because of your love and trust that I am able to share my passion for cooking and recipes with all of you. This book is the sum total of my passion and I just can’t wait to see you all cooking from the book and share with me the feedback from your young ones. 

As a gesture to express my gratefulness for all your LOVE and SUPPORT , I made this simple and delicious Banana Walnut Cake. This is a foolproof recipe and I am sure that this recipe will delight your young ones and also impress everyone else in your family. 

 This is an eggless, super moist cake and you will have yummy banana walnut cake  in just 30 minutes. 
I have tried and tested this so many times and  in so many variations and it never fails. 
You have to just follow the procedure diligently. And the tip for making perfect cakes is to use the same cup for measuring different ingredients and use good teaspoons and measuring cups   that are available in the market. 

You can bake this as a cake ( using a cake pan) or as a loaf too. 

Banana Walnut Cake

Preparation time: 10 minutes
Baking time  : 20-25  minutes
1 cup = 250 ml cup
Storage : Stays good for 2 days when stored in a clean , odour free container and refrigerated

Ingredients :

1 cup whole wheat flour 
1 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of salt 
3/4 teaspoon cinnamon powder
3/4 cup mashed banana ( 2 medium size banana)
1/3  cup curd
1/4 cup oil
1/2 cup sugar
8 walnuts

Method:

1. Firstly, mash bananas well. Add olive oil ,sugar and mix well. 
2.Now add the curd and whisk again. Your wet ingredients are now ready. 
2. In another bowl, add the flour, pinch of salt,baking powder and baking soda and mix well with a fork.Add cinnamon powder and mix again. Your dry mix is also ready.
3. Add the dry mix little at a time into the wet mix , add the chopped walnuts and fold the batter.
4.Grease a baking tin with oil and transfer the cake batter into the tin. Garnish with some walnuts and banana slices. 
5.Bake in a pre-heated oven at 220 degrees C for 22-25 minutes or till the tooth pick inserted on the centre of the cake comes out clean. 
Chef tip : baking time will differ according to the type of oven you are using and also the size of the cake tin. 
6.Cool the cake in a wire rack for 10 minutes.
7.Loosen the edges gently with a knife and release the cake from the cake tin.
8.Let the cake cool in the wire rack for a few more minutes.

You can serve it just like that or can dress it up with icing sugar or butter cream frosting.
