Dal Fry and Jeera Rice needs no introduction. This is my favourite combo to order in a North Indian Restaurant.
My family enjoys the dal fry and jeera rice that I cook and are still puzzled why I would order that combo even though I make it frequently at home. My love for the yellow dal tadka/dal fry is so much and also it is always a refreshing change to eat food (not cooked by yourself :) )

Restaurant Style Dal Fry/Yellow Dal Tadka Recipe By Masterchefmom:
Preparation time: 10 minutes
Cooking time: 25 minutes
1 cup =200 ml cup
Serves:4
Ingredients:
To be pressure cooked:
1 cup dal
3 cups water (adjust)
2 tomatoes(chopped)
1 onion (chopped)
3 garlic cloves (chopped)
1/2” ginger (chopped)
2 green chillies
Pinch of turmeric
1/2 teaspoon Kashmiri chilli powder
1/4 teaspoon cumin/jeera powder
1 teaspoon dhania/coriander powder
2-3 teaspoons ghee/clarified butter
Salt to taste
For the tempering:
1 tablespoon ghee
2 dry red chillies
1/4 teaspoon cumin seeds
2 garlic cloves(finely chopped)
1/8 teaspoon Kashmiri chilli Powder
Pinch of hing/asafoetida
Method :
- Heat a pressure cooker with ghee.
- Temper with ginger and garlic.
- Once they turn light brown, add onions and continue to fry them over low flame.
- Now add the tomatoes, salt , chilli powder, turmeric powder and continue to cook them till the tomatoes breakdown and turn mushy.
- Add three cups of water and the washed dal.
- Pressure cook over low/medium flame for 4-5 whistles.
- Once pressure releases, place the cooker back on low flame and gently mash the dal using a hand whisk. Transfer it to a serving bowl.
- Place another small pan or tempering pan over low flame and heat ghee.
- Add chopped garlic and fry them.
- Now add cumin seeds and dry red chillies.
- Immediately add Kashmiri Chilli Powder and switch off.
- Pour the tempering over the dal.
Garnish with coriander leaves if you like.
Delicious restaurant style dal fry is now ready to be served .
Jeera Rice by Masterchefmom | One Pot Jeera Rice
Preparation time:5 minutes
Cooking time :15 minutes
Serves :3
1 cup =250 ml cup
Ingredients:
2 cups Basmati Rice
2 Bay leaves
2 tablespoons ghee
1 teaspoon cumin seeds/jeera
3.5 cups water(adjust)
Coriander leaves (garnish,optional)
Salt to taste
Method:
- Heat ghee in a pressure cooker and add bay leaves and cumin seeds.
- Add water, washed rice, salt .
- Pressure cook the rice only for 1-2 whistles and switch off.
Your flavourful jeera rice is now ready to be served. You can always garnish the rice with more ghee and coriander leaves.
