You can start with this recipe. You can adjust the spice levels according to your taste. I have shared the recipe to make a small batch . You can always double up the recipe.
I usually serve this thogayal/chutney as the first course along with hot rice and ghee. So warm, comforting and tasty.
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 2
1 cup = 250 ml cup
Storage : The chutney keeps good for 2 days when refrigerated. You can add a tsp of sesame oil (extra) on top for it to last a day or two longer.
Ingredients:
15-20 shallots/small onions
1 tsp urad dal/husked black gram
1 tsp mustard seeds
2-3 garlic cloves
1/4 tsp ginger(grated or chopped)
1-2 dry red chillies( adjust according to the variety of chillies you are using)
marble size tamarind ( OR 1/2 tsp tamarind paste)
2-3 tsp sesame oil
1 sprig curry leaves
salt to taste
Method:
1. Heat a pan with oil and add urad dal, mustard seeds and allow the mustard to splutter.
2. Add ginger, garlic, dry red chillies and fry them till the raw smell escapes.
3. Add curry leaves, shallots and fry them for a minute and switch off.
4. Once cool, transfer them to the jar of a mixer, add salt, tamarind and grind the mixture to a coarse paste consistency. No need to add any water.
Chef tips: However, if you are serving this chutney for any tiffin like dosa, idli etc., then add few tablespoons of water . Adjust consistency of the chutney according to your family taste preference.
