Hyderabad Special KARACHI BISCUITS | How to make Karachi Biscuits at home | Stepwise Pictures

Hi SUPERMOMS,

I am sure you would have tasted or atleast heard of these famous cookies from Hyderabad. My husband gets packets of these delicious melt in the mouth cookies whenever he visits Hyderabad.
Their recipe is believed to be a well kept secret...and having said that, it always used to keep me thinking as to what all ingredients could be there in these awesome biscuits!

One of my foodie friends Swetha, inspired me with her recipe of these biscuits. In her recipe, it had only three main ingredients : Maida, butter, sugar. The kneading of the dough is made completly with butter. I tried and it came out yummy.

But I was not satisfied with the texture and colour....until I read another recipe from FONDBITES. Was so happy with the results, that I want to share this recipe with you all. I made a huge batch of cookies and stored it in my cookie jar. I have also been sending a few cookies in tiffin box too... Crunchy and so flavourful

INGREDIENTS:

Unsalted butter- 350 gms,softened
Icing sugar- 1 1/2 cups,
All purpose flour- 3cups
Baking powder-1/2 tsp
Salt-1/2 tsp
Orange zest -1 orange
Fresh orange juice- 1/4 cup
Pure vanilla extract -1 tsp
Tutti frutti-100 gms
Cashews-1 cup ( broken)

Let us go to the procedure.

1. Whisk all the dry ingredients together with zest.

2. Add the tutti frutti  and the nuts.

3. In a bowl, whisk the butter. Add the icing sugar and whisk till you get a light and creamy texture.

4. Add the orange juice and flour mixture and beat till all the flour is incorporated. DO NOT OVER BEAT.

I mixed the flour with hand.

5. Wrap the dough in a cling film and shape it so that it form a square when you cut it later. Though, you can shape it however you want.

6. Freeze the dough till it firms up or even overnight.

7. Cut the cookies and and arrange them in a lined baking tray.

8. Bake them in a preheated oven at 180 degrees for 10 minutes or till the sides start browning. Cool them in a wire rack .

My entire home was filled with the aroma of orange. If you do not like orange flavour, you can substitute with the fruit you like.

This recipe is a keeper. Thanks to Subhashini for this awesome recipe!!!

Do try SUPERMOMS!

HAPPY COOKING!

With love,

MASTERCHEFMOM
