Ellu Saadam | Sesame Seeds Rice | How to make Ellu Saadam | Healthy Recipe | Vegan and Gluten Free Recipe | Festival Delicacy



Hi Supermoms,

If you have had the opportunity to visit South Indian temples especially on Saturdays  you might have tasted this delicious, spicy rice made from Sesame Seeds. And once tasted, you are sure to love it!

Sesame seeds is an excellent source of copper, manganese, calcium, iron, zinc and also full of dietary fibre. It is most ideal to include Sesame seeds in our everyday diet .

Coming back to thhe 'Ellu Saadam', this rice can be prepared easily with just a few ingredients.  I make this rice frequently. You can grind the 'Spice powder' in advance and mix with hot rice.

Whether you are cooking for any Special occasion , Picnic or for Tiffin box, Ellu Saadam is ready in a jiffy!





ELLU SAADAM | SESAME SEEDS RICE :

Preparation time : 10 minutes
Cooking time : 20 minutes
Serves: 2
1 Cup =250 ml

Ingredients :

1 Cup Uncooked Rice ( I used Sona Masoori Rice)

For the Spice powder :

1 & 1/2  teaspoon Urad Dal/ Split Black gram
1/2 teaspoon Channa Dal/ Bengal Gram
6 to 7 Red Chillies ( I used the guntur chillies ,adjust according to your spice levels)
1/2 teaspoon Sesame Oil
2 tablespoon chopped fresh coconut ( optional)

For the Sesame Seeds powder:

1 tablespoon Sesame Seeds ( TIP: You can use black sesame seeds for the authentic taste)

For tempering:

1/4 teaspoon Mustard Seeds
1/2 teaspoon Urad dal
1/2 teaspoon Channa Dal/Bengal Gram
1 red Chilli ( preferrably Salem Red Chilli)
1 sprig Curry leaves
2 tablespoon Sesame Oil
1 teaspoon peanuts/cashewnuts (optional)

METHOD:

1. In a heavy bottom pan, dry roast the sesame seeds in low flame. They will splutter. Keep stirring it so that they do not burn. When the sesame seeds stop popping, switch off , transfer it to a mixer. When it cools down, grind it to a powder.

2. In the same pan, add 1/2 teaspoon of sesame oil, add Urad dal, Channa dal, Red Chillies and roast them till they are lightly brown. Switch off. Add the chopped coconut and grind this mixture to a coarse powder. Your spice powder is ready.


3. Cook Rice with just enough water so that the rice does not become mushy.Transfer your prepared soft, nonsticky , fluffy, cooked rice to a large plate/bowl . Now, add the sesame seeds powder, spice powder, salt and mix well.

4. In a pan, heat 2 tablespoon Sesame Oil and add all the ingredients given under 'tempering'. Once tempered, pour it on top of  the mixed rice . You will hear a sizzling sound. 
TIP: You get best taste when the oil is 'hot'.

Mix well. Your 'Ellu Saadam' is ready to be served. Since I have used White Sesame Seeds, my Ellu Saadam has a orange tint!!!
