Amritsari Kulcha | Speciality flatbreads from Amritsar | How to make Amritsari Kulcha/Kulche at home | Stepwise Pictures | Indian Flatbread Recipe


Amritsari Kulcha

Hi Supermoms,

Every few hundred meters, on the streets of Delhi NCR, you cannot miss the sight of a flat, round, large vessel titled at 90 degrees mounted on street carts with people standing around. On a close look , you will find people tearing on a pale white colour bread relishing it  with a tangy yellow peas curry . This is the most popular comfort food of the Delhite, the Kulcha. 

Kulchas are leavened Indian flatbreads that are important part of Punjabi cuisine. They have taken on different avatars depending on where you buy them. You get the pre-baked, round, soft, fluffy ones in the shops stocked along with bread. You will get flat, thin, elongated oval shaped pre baked ones in the roadside street carts.

Ofcourse if you want the authentic one, you have to eat the Amritsari Kulchas available at many good popular restaurants or even better make them at home.

They are increasingly popular in restaurant menus these days. 


Amritsari Kulcha : 

Preparation time: 45 minutes
Cooking time: 20 minutes
Yield : 10-12 medium size kulchas
1 cup =250 ml cup

Ingredients:

2 cups all purpose flour /maida + 1/4 cup  for dusting
1/4 cup semolina/suji
1/4 teaspoon sugar
1 & 1/2 teaspoon baking powder
1/2 cup curd/yoghurt
2 teaspoon oil + extra for greasing 
water( adjust)
salt to taste
2 teaspoons kalonji/onion seeds
2 green chillies ( finely chopped)
small bunch of fresh cilantro ( finely chopped)

Method:

  •  In a large bowl, add the flour, suji, sugar, baking powder, salt and mix well using a fork.
  •  Now add the yoghurt, oil and incorporate it into the flour gently.
  •  Add water little by little and gather the mixture into a soft dough. Do not knead too much.
  • Grease a bowl and rest the dough  covered for 40-45 minutes.
  •  Gently knead the dough for 3-4 minutes and divide them into equally into smaller  portions.





    How to roll out a Kulcha:

    1. Take some flour on a plate and roll each small portion of the dough into balls using little pressure between your palms.
    2. Flatten them lightly and place them on the floured plate and coat them with flour.
    3. Sprinkle some kalonji seeds , chopped green chillies and cilantro on the work surface.

    4. Place the flattened dough and roll out the kulchas  into 6" -7" circle using a rolling pin (just like rotis).
    5. Heat a skillet/tawa, brush the tawa with oil and  cook the kulchas on both sides till they are light golden.
    Alternatively,
    Line a baking tray with foil and grease it with oil. Bake the Rolled out kulchas in a preheated oven at 200 degrees C for 2-3 minutes on each side or till lightly golden.




    Smear each kulcha with butter and serve hot with freshly sliced onions, green chillies and your 
    choice of curry and achaar( pickle).

    Chef Tips:

    1. You can use whole wheat flour also for making these kulchas.
    2. You can prepare various fillings using potatoes, paneer/cottage cheese and make stuffed kulchas.
