Chocolate Truffle Energy Balls

Hi Supermoms,

Home made healthy snacks is always a great option. Here is another easy, quick and under 10 minute No Bake dessert/snack recipe for you. You can use oats, muesli, cornflakes, rice puffs along with dry fruits of your choice to make these energy balls. I have not used refined sugar or butter in this recipe. If you are making these energy balls for children, then you can add butter or ghee to make it even more tasty.

With growing kids who are always hungry, these energy bites will keep them satiated . 

Chocolate Truffle Energy Balls:

Preparation time : 5 minutes
Cooking time : 5-7 minutes
Makes : 15-20 energy balls
1 cup = 250 ml cup
Storage : Stays good for upto 7 days when stored in a clean , dry,  odour free , air tight container. 

Ingredients :

 3/4 cup Muesli/Oats/puffed rice/cornflakes
1/2 cup dry fruits ( mixed, chopped)
5-6 dates ( seedless) ( juicy ones)
1 tablespoon honey
1 tablespoon cocoa powder
2 teaspoons oil/ghee/butter
1 cardamom ( powdered , without the skin)
pinch of salt

For coating /dusting :

1 tablespoon cocoa powder

Method :

1.Add the dry fruits inside a big zip lock cover, seal the cover  and using a rolling press, crush the dry fruits into smaller pieces.
Note : Alternatively, you can use your mixer/food processor to coarsely crush the nuts. Do not grind it fine. Large chunks add to the crunch of this energy balls. 

2. Add the rice puffs into the zip lock, seal  and again repeat pressing the process to crush the puffs into smaller pieces. 
3. Heat a pan with oil over low flame , add honey and keep stirring till they mix well.
4. Now, add the cocoa powder and mix well ( over low flame).
5.When the mixture starts to bubble, add the dates and using a flat ladle, mash and incorporate them into the cocoa syrup.
6. The mixture will start bubbling and coming together, switch off. 

7. Immediately add the crushed rice puff and dry fruit mixture into the pan with the cocoa mixture.
8. Mix them well.
9. Grease your hands with oil/butter/ghee and shape them into balls.

10. Once the entire mixture is shaped, dust the balls with cocoa powder using a sieve.



Your Chocolate Truffle Energy Balls are ready .

You can use these Energy balls to decorate your Cakes or Pudding. You can coat the balls with melted chocolate .
