Snake Gourd /Pudalangai is a tasty as well as a healthy vegetable. It is a cooling vegetable and is consumed a lot during the summer months . High in dietary fibre and rich in vitamins , the snake gourd is easy to cook too. Today, I am sharing a quick and easy stir fry recipe .
You can finely chop the snake gourd if you like. But I like to cut it this way as it looks really pretty. Select tender snake gourd to make this dish. They taste the best.
Serve it as a side to your flatbreads or enjoy it along with rice for lunch.
Thanjavur Style Pudalangai Poriyal:
Preparation time : 15 minutes
Cooking time : 10-12 minutes
Serves : 4
1 cup = 250 ml cup
Chef tip : Use Iron kadai/wok for the best tasting pudalangai poriyal
Ingredients :
2 medium size snake gourds OR 3 cups snake gourd ( chopped)
1/2 cup fresh coconut ( grated)
salt to taste
For tempering :
2 teaspoons sesame or coconut oil
1/2 teaspoon mustard seeds
1/2 teaspoon urad dal/husked and split black gram
1/2 teaspoon channa dal/ Bengal gram
2-3 dry red chillies
1 sprig curry leaves ( roughly torn)
Method :
1. De-seed and thinly slice the snake gourd.
2. Sprinkle some salt and let it rest for 10 minutes.
3. Heat a kadai with oil over low flame and temper with the ingredients given 'For tempering'.
4. Squeeze out the extra water and add the snake gourd.
5. Adjust the salt levels and cook for 5-7 minutes or till the time the snake gourd is cooked.
Chef tip : All the water would have been absorbed. Do not over cook the snake gourd. A light crunch in the snake gourd makes it even more tasty.
6. Add the grated coconut, mix well and switch off.
Your simple , healthy and tasty Pudalangai Poriyal is ready to be served .
