Vella Sundal | Green Gram Sprouts Sweet Sundal Recipe

Hi Supermoms,

Usually with legumes, we make savoury dishes. Today I am going to share a delicious sweet recipe using green gram/green moong sprouts. 

'Vellam' means jaggery and this sundal is made using jaggery. Fresh coconut makes the sundal even more tasty. I made this sundal for neivedyam/prashad yesterday and thought that I will share the recipe with all of you this time. 

Traditionally, only coconut is added along with the green moong beans. However, you can add pomegranate pearls, carrot and finely chopped apple into the sundal. Also, longer strands of grated coconut will make the sundal even more scrumptious. Due to time constraints, I ground them in my mixer. You can also heat ghee/clarified butter and roast a few cashew nuts, raisins and dry fruits of your choice and add it to the sundal. This makes it even more wholesome and tasty.

This is a healthy snack and children will love it. You can serve it as an after school snack too. You can use soaked or sprouted  green moong . Either way, Vella Sundal tastes amazing.

Vella Sundal | Green Gram Sprouts Sweet Sundal Recipe :

Preparation time: 4-5 hours ( for soaking)
Cooking time : 20 minutes
Serves : 2-3
1 cup = 250 ml cup

Ingredients :

1 cup green gram/green moong ( steam cooked)
1/2 cup jaggery ( adjust according to the variety of jaggery you are using)
3-4 cardamom pods ( powdered)
1/2 cup fresh coconut 
1 carrot ( peeled and grated)
1/4 cup pomegranate pearls ( optional)


Method :

1. Heat a kadai/heavy bottom vessel with jaggery and 1/4 cup of water.
2. Once the jaggery melts, filter to remove impurities and transfer it back to the kadai.
3. Once the jaggery mixture thickens, add the cardamom powder and the steamed green gram.

4. Mix well and cook over medium flame for 2-3 minutes.
Chef tip : The green gram should not have water. Drain and add it to the jaggery mixture to get a good texture. The green gram should not be over steamed , else they will get mashed.
5. Switch off and add fresh coconut , carrot and pomegranate pearls.

Your delicious Sweet Sundal/Vella Sundal is now ready !
