Milky Rich X’Mas Cup Cakes | Eggless Christmas cupcake recipe | Easy Cake Recipe Using Mixer Grinder

Christmas is here and I am so excited to share my delicious Christmas Cupcakes with all of you. The recipe is eggless and can be made double quick and all you need is a mixer grinder and a microwave oven with convection capability. 

Add all the ingredients into the jar of the mixer to make your delicious cake batter and then bake it in the microwave . 

Within minutes your super yummy cupcakes are ready. 

Yes, it is that simple !

Milky Rich X’Mas Cup Cakes By Masterchefmom

Preparation time : 5 minutes

Baking time : Pre-heat oven at 180 degrees C for 10 minutes. Bake at 180 degrees C for 12-15 minutes ( I used the convection mode in a microwave to bake these cupcakes)

Makes: 9 medium size cupcakes

1 cup = 250 ml cup


Ingredients :


1 cup all purpose flour

1 cup condensed milk

1/4 cup ghee 

1/4 cup + 2 tbsp milk

1/8 tsp nutmeg powder

1/8 tsp cinnamon powder

1/8 tsp dry ginger powder

1/2 cup candied dried berries/fruits/tutti frutti

1/8 tsp vanilla essence

1/8 tsp orange zest

1 tsp baking powder

1/4 tsp baking soda


For Frosting :


1 cup butter

1-2 tbsp  cream 

2.5 cups icing sugar (adjust)

1-2 drops Vanilla essence 

 

For Garnish :


Sugar Sprinkles

Marsh mellows

Chocolate Shavings

Tutti frutti

Method:

1. Add all the wet ingredients ( ghee, condensed milk and milk) into the jar of a mixer and grind them just for a few seconds .
Chef tip: You can use the pulse button option in your mixer grinder.
2. Now sieve the flour, baking powder, baking soda together and add it to the jar of the mixer grinder and pulse again till they are well combined. 
3. Transfer it to a bowl and add the spice powders , vanilla essence, fruits and fold the batter.
4. Spoon the batter into the greased cupcake tins or wrappers.
5. Bake them in your pre-heated oven at 180 degrees C for 12-15 minutes or till the time a tooth pick inserted in the middle of the cake comes out clean.

Your delicious cupcakes are now ready to be enjoyed. You can also frost them to make it more festive and rich. I made a simple butter cream frosting , again using my mixer grinder. I added room temperature butter into the jar of my mixer grinder and creamed it just for a few seconds. Then added the icing sugar and ground again. I also added the cream and vanilla essence and pulsed it for a few seconds. Transferred the icing to a piping bag . Once my cupcakes were cooled enough, I frosted them and also added some sprinkles for garnish.

It was simply stunning to look at and also tasted delicious.
