Soya Nuggets are popular with my children. I make a few dishes that are favourites with my family. Today, I am sharing the super delicious Soya Chunks Curry or Gravy that goes very well with bread. I served it with poori and it was so delicious.
You can serve it with chapatti,roti,naan or even toast bread and serve it along with it.

Note : If vegan, substitute oil for ghee and cashew cream for milk cream.
Ingredients :
1.5 cups soya chunks/soya nuggets
6 tomatoes
2 green chillies
2-3 potatoes (optional)
1 small bell pepper (optional)
1/4 cup green peas
2 onions (thinly sliced)
Handful of coriander leaves
3 tablespoons ghee
2 bay leaves
1.5 teaspoons ginger garlic paste
1 teaspoon Kashmiri Chilli powder
1 teaspoon coriander powder
1/4 teaspoon jeera powder
1/4 teaspoon garam masala powder
1/8 teaspoon turmeric powder
1/2 teaspoon kasuri methi
3-4 teaspoons fresh cream (adjust)
Salt to taste

Method:
1. Wash the soya chunks twice and soak in hot water with a large pinch of salt for at least 10 minutes.
2. Grind green chillies along with tomatoes without adding any water to a puree'.
3. Heat a kadai or wide pan with ghee and add bay leaves.
4. After a few seconds add the ginger garlic paste and fry over low flame till the ginger and garlic lose their raw smell.
5. Add the Kashmiri Chilli Powder and mix well.
6. Now, add in the sliced onions and fry them well over low flame.
7. Add salt and turmeric powder.
8. Add the ground tomato puree'.
9. Add all the spice powders .
10. Also add the peas and potatoes(if adding).
11. Cover and allow the mixture to cook for 10 minutes or till the ghee separates on the sides of the pan.
12. Now add another half to 3/4 cup of water and allow it to simmer for another 5 minutes.
13. Squeeze out the excess water from the soya chunks and add them to the gravy.
14. Add Kasuri Methi, fresh cream and switch off. You can also garnish with fresh coriander leaves.
Your delicious Soya Curry is now ready to be served with poori/chapathi/roti/naan/dosai/cheela/toasted bread or any other tiffin of your choice.
