Cauliflower Pasta | Cauliflower Pasta with Garlic Cheese Toast | Cauliflower Pasta Bake | Masterchefmom


 Hi Supermoms,


Today, I am sharing a recipe that I make weekly at home. Kids love it but the best part is that even my ‘non pasta loving husband’ enjoys it without complaining. 


Otherwise, I have to think of an alternate menu for him if I am planning pasta for kids. And making two different menus is not always easy. 

So, cauliflower pasta is always a winner. It is so tasty and we never get bored of it. Refined flour free white sauce is a must try! 


I had shared this recipe on my instagram last year and many have tried this recipe in their kitchens for their family and have shared amazing feed back. So, go ahead and try this recipe today. 





Some variations that you can try :


      1. If you do not want to bake, you can always serve the cauliflower pasta as is. It tastes yummy. 

    2. You can also bake the cauliflower pasta with garlic butter and finely chopped chillies and   cheese. It becomes a delicious Baked Cauliflower Pasta with Chilli Cheese Toast. You can check my instagram highlights for the recipe where I have shared the chilli cheese version. 

     3.You can also add vegetables like colourful bell peppers, olives, onions on top of the bread and then sprinkle cheese.

     4.You can skip dry red chilli and add chilli flakes later.

     5.You can skip dry red chilli and only add black peppercorns for spice. 

    6. You can make this dish completely vegan by substituting nut milk of your choice and skip the cheese. You can mix olive oil along with garlic and Italian spices and spread it over the bread. 

    7. You can also skip the bread pieces and just garnish with cheese and bake.

Baked Cauliflower Pasta with Garlic Cheese Bread By Masterchefmom


Preparation time: 10 minutes

Cooking time: 40 minutes

Serves:2

1 cup =250 ml cup


Ingredients :


1 cup penne pasta ( you can use pasta of your choice, cook them Al Dente’ with salt )


For the White Sauce:


1 cauliflower

4 garlic cloves

1/2 dry red chilli

1.5 cups milk(adjust)


1/2 cup cheese( mix of mozzarella and cheddar tastes best)

1/8 teaspoon nutmeg(grated)

1/2 tsp black peppercorns(powdered)

Italian Herbs (dry)(adjust)

Salt to taste


For the Garlic Bread with Cheese:


4-5 bread slices

1 tablespoon butter

2 garlic cloves(crushed)

Grated cheese(adjust)

Dry Italian herbs 


Method:


  1. Cook cauliflower in 3 cups of water along with garlic cloves and red chilli(if using).
  2. Drain the excess water and transfer the cauliflower along with garlic and chilli to the jar of a mixer.
  3. Add milk and grind to a smooth puree’. 

        Chef tip: You can grind in batches. Make sure to grind it smoothly.

     4. Heat a kadai/pan with oil and add the cauliflower sauce.

     5. Add salt, nutmeg, black pepper .

     6. Add the cooked pasta, cheese and sprinkle dry herbs. Switch off.

     7. In a bake proof pan/bowl , add the cauliflower pasta and top it with a layer of bread. 

     8. Spread a layer of the garlic butter, cheese and sprinkle dry herbs on top.

     9. Bake the pasta in a pre-heated oven at 200 degrees C for 20 minutes or till the time the cheese on   top is beautifully browned.


Your delicious Baked Cauliflower Pasta is now ready to be served!
