Hi Supermoms,

Hope you are all keeping well. 

Some of you might have taken the first dose of the Covid vaccine. I was supposed to take it couple of days back but was unable to do so as I got my monthly cycle. My doctor advised me to take it at least week later since I was feeling a little weak. So, if you are registering yourself for the vaccine, do keep this point in mind when deciding on the date. 

Is this really 2021? Because it feels like 2020 again. Life has come a full circle. The Covid situation has gotten worse. Let us continue to follow the SMS protocol strictly to get back to normalcy ASAP:

S - Social distancing
M - Mask wearing (wear mask properly) 
S - Sanitisation of hand with Sanitiser or Soap

Before I get in to today's recipe, I would like to remind you about my previous letter to you about Dhaniya Sprouts Rice. Hope you share the same enthusiasm like me for "sprouts based recipes”. Coming to today's recipe, I am delighted to share with you the "Green Gram Sprouts Beetroot Hummus”. Like all my recipes, this too is easy to make with simple ingredients. You can serve it along with chips/nachos or apply them over toasted bread and sprinkle vegetables of your choice over them. The options to serve them are plenty and I guarantee you the snacks you serve them with, will disappear very quickly from the plates. It is also a great lunch box recipe. Children who otherwise hesitate to eat sprouts, will love this .

Green Moong Sprouts Beetroot Hummus Recipe By Masterchefmom

Preparation time: 5 minutes
Cooking time : 5 minutes
Serves : 4-6
1 cup = 250 ml cup 
Storage : You can store the hummus in a clean, odour free jar/bowl and keep it refrigerated for uptown 2 days. You can also line the jar/vessel with olive oil before you transfer the hummus for longer shelf life. 

Ingredients :

1 cup green gram sprouts
1 beetroot
2 garlic cloves
1 dry red chilli (adjust)
juice of 2 lemons
1-2 teaspoon sesame oil
1 tablespoon olive oil ( adjust)
salt to taste

For garnish:

1/4 teaspoon roasted cumin powder/jeera powder
1/2 teaspoon sesame seeds (toasted)
1-2 teaspoon olive oil 

Chef Tips : 


The green gram sprouts and the beetroot have to be cooked till fork tender. The sprouts hardly take 2 minutes to cook in a microwave. Add 1/4 cup water and microwave on high for 2 minutes. For beetroot, you can peel and cut them in small pieces and add 1/2 cup water and microwave for 6-7 minutes.  You can also steam them in a steamer for 10 minutes . You can also boil them over gas stove but make sure that they do not over cook. Both beetroot and sprouts need to cook till they are fork tender. Over cooking changes the taste and texture of hummus completely. Drain the excess water before you add them to the jar of the mixer grinder or blender. You can refrigerate the drained water for a few minutes and use a few tablespoons of this water to grind the hummus for extra creamy taste and texture. I do not like the taste of tahini and so used sesame oil instead. If you like tahini sauce and have it at home, you can add a teaspoon of it instead of sesame oil. 

Method:

1. Add the sprouts, beetroot, dry red chilli, sesame oil, olive oil, lemon juice, garlic cloves, salt  to the jar of a mixer grinder or blender and grind to a smooth creamy consistency. 
Chef tip : Taste and adjust salt . Adjust tanginess as per taste. 

2. Transfer it to a serving bowl. 

3. Garnish with jeera powder, sesame seeds and olive oil as per taste. 

Your healthy and tasty Green Moong Sprouts Beetroot Hummus is now ready to be enjoyed. You can also refrigerate and use this for 2 days.
