Dhaniya Sprouts Rice | Green Gram Sprouts Rice with Fresh Coriander leaves | Green Gram Sprouts Rice Recipe | Gluten Free and Vegan

 

Hi Supermoms,

This recipe was born after a phone conversation with my mother. We were talking about the customary Idli/Dosa batters that both of us ground for the week. I mentioned to her that I also soak legumes to make sprouts along with grains and pulses that I usually soak for Idli/Dosa batter, for my sprouts salad.

It is a habit that I inherited from my mother much before my marriage. My mother used to religiously soak different legumes and sprout them for the sake of my Father. His Doctor had recommended that he have a bowl of sprouts everyday for keeping good health and my mother religiously ensured it for many years.

Now, back to our conversation. She wanted my ideas as to new recipes that she can try with sprouts. We started talking about different recipes  she can try with sprouts.

After I hung up the phone, I started thinking. Why not create and document many more sprouts based recipes that are easy to make and also appeal to everyone's taste buds. That's how this new recipe was born.

Presenting the, Dhaniya Sprouts Rice, simple yet flavour packed. This is a recipe without ginger, onion or garlic, which means it can be done any day of the year. For those of you who love the flavours of Garlic or Onion, you can always add them and enjoy the way you want.

Instead of rice, you can also use millets of your choice. Just cook them like rice and add it to the sprouts mixture. 

A tip for those who forget to soak the sprouts in hot water for making this rice: You can also microwave the sprouts along with half cup of water for just 2 minutes. Drain the excess water and add it to the tempering. You can add the sprouts without soaking them in hot water, but they turn hard while eating. Soaking them or cooking them for just a few minutes, makes them really soft to eat. 

You can use any sprouts of your choice. 

So, go ahead and try this recipe for your family. I am sure they will love it. 


Dhaniya Sprouts Rice By Masterchefmom


Preparation time: 15 minutes
Cooking time : 15 minutes
1 cup = 250 ml cup 

Ingredients: 

100 gm  coriander leaves/fresh dhaniya leaves 
1 cup green gram sprouts 
1&1/2 cups cooked rice ( you can use Sona Masoori Rice or Basmati rice)
1/2 cup freshly grated coconut
1/8 teaspoon turmeric powder (optional)
salt to taste

For tempering :

2 teaspoons oil ( you can use sesame oil or coconut oil)
1 teaspoon chana dal/Bengal gram
1 teaspoon urad dal/split husked black gram
3/4 teaspoon mustard seeds
1 dry red chilli ( adjust according to the type of chilli you are using)

Note : Add 1 cup hot water to the sprouts and keep it covered for 10-15 minutes. Drain the excess water before you add it to the tempering. 

Method:

1. Wash the fresh coriander leaves with their stalk and pat dry them in a kitchen towel.
Chef tip: You can place them in an airy place for the excess water to dry up quickly.
2. Transfer the pat dried coriander to the jar of mixer grinder and pulse it to grind it coarsely. 
Chef tip: Do not add any water.
3. Heat a pan with oil and temper with all the ingredients given under 'For tempering'.
4. Now add the drained green gram sprouts, salt and mix well.
5. Add the ground fresh coriander leaves and cook for a few seconds.
6. Add the grated coconut ( you can adjust coconut quantity according to taste) , mix well and switch off.
7. Add the cooked rice and mix well. You can always add more rice to make a larger batch. I served it as the first course and so used up only a small portion of rice to make this variety rice.
