Preparation time: 1/2 hour
Cooking time: 20 minutes
Serves: 4
Ingredients:
1/2 cup green moong
1/2 cup rice( I used khichdi samba raw rice)
1/2 cup green peas
4-5 garlic cloves ( crushed using mortar and pestle)
1 dry red chilli
1/2” ginger ( grated)
1 tbsp ghee
1/2 tsp cumin seeds
1/4 tsp turmeric powder
1/4 tsp chilli powder
1 tsp dhania / coriander powder
4 cups water ( adjust)
salt to taste
Method:
1. Wash twice and soak the rice and whole green moong in 4 cups water for at least 1/2 hour .
2. Heat a pressure pan or instant pot with ghee
And temper with cumin seeds.
3. Add dry red chilli, garlic , ginger and allow the garlic to lightly brown .
4. Add the peas, spice powders, salt and mix well.
5. Add the soaked rice and green moong along with water. Pressure cook for upto 4 whistles on medium flame and switch off.
6. Once the pressure releases, serve the khichdi with generous amounts of ghee, pickle, curd and papad.
Chef tip: adjust water quantity depending upon the rice variety you are using. Also, if you do not like the flowy texture, you can reduce the amount of water accordingly.
