Dear Supermoms,
Today I am sharing a tasty side dish using Snake Gourd - The Snake Gourd Poriyal or the Pudalangai Poriyal or Pudalangai Kari as we call it at home.
You can use sambar powder to spice up this Kari or can use the chilli powder and coriander powder as I have shown in the video. Either way, it tastes yummy.

How to cook Snake Gourd
Chef Tips:
1. Chop the Snake Gourd into thin slices. This helps it to cook faster. You can also finely chop them.
2.Add salt to the sliced Snake Gourd and allow it to sit at least for 15 minutes. Squeeze the excess water and cook the Snake Gourd.
3.Allow the onions to fry well before you add the snake gourd.
4.Cook in an iron vessel for the authentic taste.
Pudalangai Poriyal/Kari Recipe | South Indian Style Snake Gourd Stir Fry With Onion Recipe By Masterchefmom
Preparation time: 15 minutes
Cooking time: 25-30 minutes
Serves:3-4
Ingredients:
3 Snake Gourds (thinly sliced)
2 Onions(finely chopped)
1/4 tsp turmeric powder
1 tsp chilli powder(adjust)
1 tsp coriander powder
salt to taste
To temper:
2-3 tsp coconut oil ( or oil of your choice)
1 tsp mustard seeds
1 tsp chana dal
1 tsp urad dal
1 sprig curry leaves
Method:
- Heat oil in a kadai/pan and temper with ingredients given under “To Temper”.
- Add the chilli powder, turmeric powder, coriander powder and mix well.
- Add onions, salt and mix well.
- Cook over low flame till the onions fry well. Note: This step will take 10 minutes.
- Now squeeze out the excess water from the Snake Gourd and add it to the onion mixture.
- Add 1/4 cup of water, cover and cook for 15-20 minutes. Note: Stir intermittently.
- Taste and add salt.
