Brinjal Kari with Onions

It has been quite some time since I updated recipes on the blog.  I have been sharing a lot of recipes on my instagram and youtube channel. Hope you are following me there too. 


Raghu is a big fan of brinjal and I try and make various brinjal dishes. One such  favourite is the  delicious Brinjal kari or the Brinjal stir fry that tastes amazing with rice or roti. We call this Ennai Kathirikkai Kari at home. You can make this Kari with or without adding onions and garlic. But the taste of the Kari is elevated with the addition of onions. This is the everyday brinjal kari that you can make with just a few ingredients. 


Over the years, I have learnt that the taste and texture of this Kari will change depending upon your selection of brinjal. There are so many varieties of brinjal in the market and choosing the right one to make this kari can get overwhelming. So, here are a few tips and tricks to select the right brinjal and make a delicious kari.


How to buy and cook Brinjal: 


Tip 1 : Select the purple variety long brinjal to make this stir fry/kari.


Tip 2: The brinjal has to be lightly wrinkled.


Tip 3: Slicing the brinjal is key in getting the right taste and texture and also for the uniform and easy cooking of the vegetable. Do follow the method shown in the video. Big slices will prevent uniform cooking of the vegetable and few uncooked parts spoils the taste . Also, finely chopping them will make the dish mushy. 


Tip 4: Keep the chopped brinjal soaked in water to prevent discolouration


Tip 5: Try and use iron kadai or any heavy bottom kadai to fry the vegetable. 


Tip 6 : Try and use sesame oil for the authentic taste. However, you can always us the oil you are used to cooking to make the vegetable. A teaspoon of ghee to the oil will add extra taste and flavour. 


Tip 7: Cook this vegetable on low flame.

 Kathirikkai Kari | South Indian Style Brinjal Fry By Masterchefmom


Preparation time : 10 minutes

Cooking time: 25-30 nminutes

Serves: 4


Ingredients:


1/2 kg brinjal

2 onions

1 tsp Kashmiri chilli powder

1 tsp coriander powder 

OR 1.5 tsp sambar powder

1/8 tsp turmeric powder(optional)

salt to taste


To temper 


2 tbsp sesame oil

1/2 tsp chana dal

1/2 tsp urad dal

1/2 tsp mustard seeds

2-3 garlic cloves

1 sprig curry leaves


Method:


1. Heat a kadai with oil and temper with ingredients given for the same.

2. Add the spice powders and add onion ,salt and fry for a few seconds.

Important Note : Fry on low flame to prevent burning of the spices.

3. Once all the excess water has evaporated, add brinjal, mix well and cook over low flame for 20-25 minutes or till the desired consistency is achieved. 


Your delicious Brinjal Kari is now ready to be served!!
